Brilliant. I have been looking for a stove for my boat for a while and always been put off by the cost. I was half way there making my own when I came across your channel. Thanks so much for sharing. Great idea. Ordered from two of your links. Couldn't figure out where to put a propane tank on our Contessa 26. This will work great when the boat is heeling. Still working on the stove clamps, as different pots, pans, and kettles come in different sizes.

Cut some triangle gussets and glue them to the outside of the bookends and bench that should stop the sideways movement

Good solution but how about the fore/aft movement?

That is a much smaller problem on a boat. A 20 degree left/right angle is reasonably common on a sailboat, but it would take mighty big waves to do that fore/aft and if it's that rough, perhaps people shouldn't be cooking at that point. But if it really bothers you, you could cook up (pun intended) a similar arrangement for fore/aft. Good luck.
