I sometimes think the hardest thing for me, is that I'm a very picky eater. I don't like most meats, won't touch seafood of any type with a 10 foot pole. I love things like nuts & seeds. I love eggs, cheese/other dairy, fruits & veggies. Of course, peas, corn, potatoes, cukes & tomatoes are among my favorites. I'm always trying to find good recipes, but it's always a challenge.

Thank you for the reply, Doctor. I do eat very little of these whole grains--red rice, brown rice and sourdough bread--because they taste awful anyway! My health provider knows. She insists on some medications being retained until I reach a steady blood glucose level. But I need to also think of my nerves due to neuropathy in one leg, for which I have to refer to a neurologist 🙃

I eat a green apple daily and strawberries with Greek yogurt. I eat cherry tomatoes with red onions and green onions and spinach with a scrambled egg in all the veggies. My snack is popcorn in which I cook in a pot and I sprinkle season on it

@@SugarMDs I eat avocado daily. I give half to my son and half to me. I squeeze limes over my avocados . I eat a scoop of cottage cheese with my eggs. I make a cucumber salad with cherry tomatoes and red onions. I make tuna with seasons and squeeze lemon juice over it. I make mushrooms with olive oil and sprinkle black pepper .

@@SugarMDs I make cottage cheese snack. I use parchment paper and spray it . I use a tub of cottage cheese that is 16 oz. I sprinkle everything bagel seasoning on it and bake it at 400 degrees for 30 minutes. It’s a great snack. I also make Parmesan cheese veggies. I use parchment paper and spray it . I sprinkle the Parmesan cheese all over the paper. I place broccoli or mushrooms on top and pour more cheese on top of veggies and cook it at 400 degrees 40 minutes

@@SugarMDs I do have an RDN, a GI doctor, and an internist. They are helpful but often stumped by my issues. Simply- prepared meat is one of the few foods that don't cause unpleasant reactions, but a carnivore diet is so limiting.
