Singara recipe + sweet chutney with secret tips and tricks-Bengali mishti'r dokan-style singara

Bengali singara recipe + bonus with sweet chutney that singara is usually served with: A couple of years back we had made a phulkopir singara video. This recipe uses a plain potato filling instead. Plus, this includes several modifications to the crust/pastry that we have been working on in the last two years. So, you could think of this as the singara pastry version 2.0
We also realised that there are no reliable videos on KZbin for the sweet Bengali sweet chutney that is served with the singara in Calcutta. So, we decided to reverse-engineer one of our favourites-good old Ganguram. The chutney is both sweet and hot, and it gets its unique flavour from the spices used as well as the sugarcane jaggery. We think you are going to like it.

The reason they use weights is because you get accurate and perfect results every single time. Even if you don't know how to cook and follow the recipe to the T, you will come up with something very close to the original recipe. On the other hand, when you measure in teaspoons and tablespoons, every house uses spoons of different sizes, and how much of anything to take...do you use a heaped teaspoon of some spice, or flatten it out. Cooking by weight is a very scientific approach to cooking and works especially well with baking. Invest in a kitchen scale, and try it once. You will not be disappointed.

@Asha Lizzy Haha, yeah they should. Although one thing people don't realise is that making sweets at home is very tough. We have special cooks called 'moiras' who have been making sweets for generations who make the sweets at sweet shops. And the equipment is very hard to come by too. Although, Bong Eats should make atleast the easier sweets like sandesh. They have one sweet recipe: Lobongo lotika. Check that out.
