Amazing chef AJ! I love chili 😋. I like to put a little bit of cinnamon with the spices. It gives a very nice touch 😉. Both of my parents are in their 70's and taking high blood pressure medication. My mom is pre diabetic and my dad a lung cancer survivor. They don't believe removing salt and oil frm their diet makes sense. Their excuse is that their doctor said to reduce salt not removed it completely and to use olive oil 😖😠. It's very frustrating to me to watch their health deteriorate and not be able to convince them to make changes for their own good. They live in Brazil so they have the language barrier to understand the information we have here in the States that is in English.

I find it so frustrating that despite eating a healthy, whole food, vegan, oil-free diet for the past 12 years, I was recently diagnosed with A-fib, and even with 2 medications I can't get my cholesterol anywhere near where my (WFPB) cardiologist would like to see it!
@MiguelTrujillo114 күн бұрын
A-fib can have lots of causes. I had a friend who was just diagnosed with A-fib, and he said that a recent infection with covid-19 may have caused his issues. Apparently covid-19 can have neurological effects and affect the cardiac nervous system which controls heart rhythm. As for the cholesterol piece, I have found in myself that weight loss helped my cholesterol numbers (my LDL is 70 mg/dL). And I also found a diet called The Portfolio Diet (you can Google it) which is designed to lower cholesterol, and it can be paired well with a vegan diet. Good luck with everything.

@@sherril.562 I have no desire for dates or maple syrup, and not at all a fan of sweets in general - I struggle to even eat fruit. I never make desserts or sweet snacks unless for someone else, and I couldn't afford maple syrup or dates if I did it on a regular basis anyway. I avoid buying products so I'm very aware of what I consume and what goes into my food. I almost never eat wheat or bread, and when I do I make an Ezekiel-type, dense, flourless sourdough bread out of a variety of sprouted whole grains and legumes. I've pretty much tried it all but apparently familial hypercholesterolemia is more stubborn than my concerted efforts, which is where the frustration comes from.

You stopped the instant pot process after 7 minutes, opened the lid, and put the kale in the instant pot. My question: did you do any more instant pot cooking? If so, how many more minutes? If not, please clarify that you just stirred in the raw kale. Just curious how the final product ended up. Thanks!

This is an earlier interview and we all learn, but Dr. Esselstynn couldn’t complete his conversation about health without your interrupting about that food you were cooking. He had important information that could benefit many and your food should have waited. I don’t mean to be cruel. You have good shows but with such an impressive doctor as Dr. Esselstynn, never mind chili or whatever that was!
