Thank you, Dr. Li, I have read your book Eat to Beat Disease and appreciate the way you wrote it to make it easy for me to understand. I began eating in a new and different way in order to lower my cholesterol so that I wouldn’t have to take cholesterol lowering medicine. My new way of eating brought my cholesterol down. My doctor is pleased and so am I. I have broadened my eating and feeling much better. The added benefit is …I lost 25 pounds!

Yum! I will be making this. Avocado toast is a frequent go-to meal...all organic, pastured, etc. Here's another approach: gluten- free toast (Basics brand 7 seed in the freezer section at Natral Grocers type stores), melt away slice of Kerry Gold cheddar on the toast, layer avocado, sautéed red onion-chopped arugula-garlic, lightly fried egg, top with fresh basil leaves or chopped mild Hatch green chile; add quality salt & ground Nigeria saliva seeds (black seed cumin) in place of pepper.

As a child I knew innately what foods were good for me and what foods were bad for me. I could have easily told you that broccoli, peaches and pears, sardines, eggs, and beef, if left unprocessed, were good for me. I could have also told you that high processed foods of virtually every type were bad for me. I'm certain I am not alone. I'm certain that infants and children are born with this information. Big Agriculture has tried to undo that knowledge. I haven't forgotten.

Dr. Li, How about NO sodas filled with sugar. Instead, every now and then, a cup of high quality seltzer water (with no sodium) added to our favorite unsweetened organic juice (in a nice chilled glass) is a satisfying and far better substitute for commercial soda in questionable aluminum cans. In fact it won't hurt to have a second helping.

To increase EGCG you want to eat it away from meals and without fat. Additional ways to increase absorption would be by adding a little bit of black pepper and it was found that taking Ascorbic acid or citric acid (vit c) with green tea massively increased the absorption of EGCG. I either take one of my vit c supplements around the time I have my tea or more often I add the juice of 1/2 a lime or lemon for the citric acid.

Do hot peppers accomplish this same goal? Say I were to reach in my freezer and take a chomp out of a fresh frozen jalapeño, would I be primed for better absorption? The variation between combinations of foods and nutrients (not to mention the timing of when they’re consumed) is astounding to me. How little we really know but have the ability to find out. But when you have those healthier milks that you speak of almond milk any type of food this is refined to the max isn't it that's all refined the almonds and whatever they add in there? So versus pure fat from a dairy cow what's worse not absorbing enough or absorbing an order at an artificial almond milk but it almond milk obviously is refined so we cannot be as healthy as a dairy milk? Or is it still a healthier way bcz those nutrients that are in the e green teas are substantially enough and a lot more than would be absorbed through the cow and therefore the refined hazards LOL are definitely letting our bodies of our microbiome I'm so way more even though it's refined?
