How long should I wait to start throwing after my summer baseball season

It depends on how much you threw during the summer season and what you have scheduled next. If you don't have any upcoming competitive events, taking a two-week break from throwing should be fine. However, if you do have competitions coming up, it might be challenging to execute a complete no-throw period and then ramp back up properly. As a general rule of thumb, it will take you about the same amount of time you took off to ramp back up to your previous throwing levels. Every situation and every athlete is different depending on different circumstances. Always listen to your body and consider consulting with a coach or trainer to tailor the plan to your specific needs.
