This session is turning point in my life , I was always worried about storing food in fridge and meal prep and was cooking 3 times in a day fresh . It consumed my lot of time and everyday I was panicked doing multiple tasks while cooking . now I do meal prep and it saves my time and takes care of my mental health also I can do my other work more productively . Now for me convenience is key.

My point is : become more active and do exercise, go out in Sunlight, do something useful to the community/society and have a passtionate goal in life and work towards it. Food is only part of life not the only thing in life. Learn to make your own simple meals fresh as much as possible. Remember simple meals won’t take much time. Only you want to make it tasty with all heavy masalas like a gravy in restaurant type meals will take time. Control your taste buds. Learn to get the taste of every vegetable instead of onion tomatoe base in evey dish.

One thing I would like to mention is, growing up in Kerala, with it's ample share of power cuts, I know how difficult it is to get some ice cubes in summer for a fresh lemonade, let alone storing or freezing food. And that's primarily the reason we don't keep leftovers in fridge. I mean we just couldn't get into using a fridge efficiently. Would love to hear Mr. Ashok's take on artificially ripened fruits using dangerous Chemicals. The only person we missed here . Saravanakumar 😊.

My husband and I work from home and eat a salad for lunch daily with store bought vegetables from the fridge (in the summer I include the cucumbers, tomatoes, kale from my garden in our salad). I make a simple salad dressing with olive oil and lemon juice or balsamic vinaigrette, salt and pepper for a week and put it on my kitchen counter. Precut vegetables from the weekend shopping trip from my refrigerator or the freezer is a life saver. The time I save by cutting and prepping vegetables for a meal over the weekend for weekday cooking is what I can devote for my Pilates workout. When buying frozen precooked meals for convenience I read the labels to check for preservatives or shady names that I don’t recognize. When cooking rice for my family I boil rice in water and throw away the starchy water. These simple changes have been easy to incorporate into our lifestyle. I ditched non stick cookware and use stainless steel cookware and cast iron. I don’t regret it. My cast iron is not expensive and will last my entire lifetime when compared to the non stick. Non stick pans may be fine but if I use a scratched or peeling pan is it safe? I have to disagree. I use a cast iron to make eggs and it works perfectly. There is something called seasoning a cast iron. Essentially apply oil to the pan after hand washing them. That is how you make a cast iron non stick. I agree that moderation is key.

Great interview sir! I very much agree with giving convenience over cooking fresh meals each time. However I feel not every restrictive notion is nonsense. For example, using nonstick pan is fine until the coating is intact, because no one wants to eat the Teflon coating once it starts coming off. But it doesn’t stay like that for long, so it’s just better to get a cast iron or a higher quality pan which lasts longer.

I use the instant pot for reheating. The steel or glass container with leftovers from the fridge goes in the instant pot with some water at the bottom. I set it on ‘keep warm’ an hour or so before mealtime. Very easy.

Nice discussion overall with valuable inputs from Krish Ashok. Dr Pal was a patient listener despite being a gastroenterologist. Most of the points put forth by Krish seemed valid except for two- 1. Fresh food always wins hands down over any preserved food. It's okay to compromise for the sake of convenience. But given a choice, fresh food should always be the option. I have seen that freshly cooked food has always been better for my health and taste buds than even a few hours old cooked food. Same with my family members too. The Indian medical science of Ayurveda and Siddha lay great emphasis on consuming fresh food. In today's world that is not completely possible but one must still maintain a balance and not be indiscriminate. 2. Usage of the freezer was encouraged by Krish Ashok. Packaged frozen food(atleast veggies) doesn't taste as good when cooked and it is definitely below par non-frozen food. Similarly home cooked food that is frozen and reheated must also be minimised.

That's just the placebo effect. You only feel it cuz you believe it and everyone tells you the same. There's no evidence that freshly cooked food is so much better for health or tastes much better when compared to frozen or refrigerated food. The difference is very minimal, and that too only for certain foods. Most of the time there is not much difference. Home cooked food that is refrigerated for one day is as good as the food that is cooked fresh. In fact it tastes better in the case of a lot of foods, the spices and masala will taste much better if its refrigerated and reheated the next day.

For reheating food, you can steam them in a instapot or idli/cooker It tastes almost as the fresh one Whenever rice, potatoes or beans/lentils are reheated, it has resistant starch. It goes down our gut hampering our absorption of nutrients. That’s the disadvantage of reheating.

On the non-stick cookware part, people who are afraid of how the teflon will react in their body, should know this. As already mentioned in the video, teflon is an inert compound that doesn't react with things. And this is why, it's even used in making stints that are put in the heart. So, even if you end up consuming some of it, it's not going to harm you at all. It will just pass through your body like a teenage tourist with a camera, who is so self-absorbed that he/she ends up only taking photos of themselves (selfies) no matter what part of the world they go to. About "cooking destroys nutrients", most people sho say this qoute "protein denaturation ", which sounds scary because someone chose a silly sounding word to define it. It doesn't harm the actual amino acids in the protein, and in the end that's what your body also needs to break the protein into. Unless you are burning your protein down to charcoal, and the amino acids are intact, it does no harm, and doesn't even impact the protein quality. But the point about "ancient men didn't have metabolic diseases" sounds like a fallacy. While we did manage to fuck up our lifestyle to the point, that people are getting diabetes in their 30s, most fossils that we see, are young people. Average life span itself was among 30s, in pre-agricultural times. So if you find a well preserved body of 20-25 year old men and women (when they died), it's not a good idea to judge their generation based on their teeth. No one knows what kind of diseases they might have had, if their average lifespan was 50-70 years.

Good perspective on storing and reheating food. However, in India unlike in the west, there are frequent power shutdowns and this causes the refrigerator temperature to go down. The food stored may not be safe for consumption.

My neighbours' doctor is a hematologist. He is a very senior doctor who has said stale food (even refrigerated ) lowers the quality of blood and reduces immunity. He says that one should not use cooked food the next day, always cook fresh and eat it tat time itself.

Great Session! I just wanted to make a note on non stick cookwares. I invested in a good Triply stainless steel pan, and learnt the water drop technique to check heat - once the pan is at the right temperature the omelette slides like it would on a nonstick. This has made cooking eggs in a pan very easy and requires minimal oil. My non stick pans never lasted more than a year, But the stainless steel pan will. Look it up, it really makes cooking easy.

I did not see this video 'debunk the myths of Indian cooking' in any way😊 What Mr. Ashok talks about is a mixed bag of his opinions (there are no foods that detox the body, nothing called immunity booster foods etc.) and some facts. The effects of reheating food and prioritizing convenience for sustainability in maintaining any kind of diet made sense. So did the info about nonstick cookware and the use of microwaves in heating food. However it has been established that the human digestive tract is convoluted in its design and is therefore more suitable for ingestion of herbivorous food unlike the alimentary canal of meat-eating animals. So I'm not sure he is right when he says humans are primarily carnivorous. Finally, in the 'takeaway' section, it is not very clear what he means by ' 'layering' and "lacto-fermenting" So Dr. Pal, in that sense, there were no real "takeaways" as you perhaps wished for us to have!!😊 PS: I guess Mr. Ashok thinks faster than he talks so his words roll over each other making it difficult for us to follow his train of thought😊

Human beings are unique in the sense we are the only ones that are cooking our food and therefore are able to digest vegetables and meat faster than other mammals. So trying to compare alimentary canal shape and concluding that we are herbivores is not quite right. We are very much omnivorous and very uniquely so. It is not an opinion but just facts

'Lacto-fermentation', is fermentation using Lactobacilli bacteria, which gives products like yoghurt (curd), most types of cheese, idlis and dosas. Shri. Ashok has a video on it on his channel. If I understand it right, what he means by 'layering' is that by combining prepared ingredients like gravy cubes with fresh ingredients, you can prepare complex dishes in the same amount of time as it would take to make something simple from scratch. Dr. Pal's excitement rubbed off on him. He was calmer on Take aPause with Varun Duggirala.

That was really illuminating. Social media is really doing some scare mongering. But what about Ayurveda? They say reheated food is tamasic and bad for spiritual development. Do Indian American docs do not believe in the science of Ayurveda? And I have asked this quetion to all proponents of intermittent fasting on u tube but no one has answered. Dr Pal I hope you will. Fantastic sir.please explain the traditional indian methods of preserving fruits, vegetables and grains as refrigeration in indian homes is not efficient due to powercuts

Many Indian household still face constant power issues even in cities and rural areas. So its not advisable to store in fridge and eat as the temperature fluctuations could be detrimental to health. All research does point at eating fresh is the best for health and nutrition

Dr. Pal and @Krishashok, I have a question: How do we prioritize risk? Eating 10 biscuits without preservatives is not better than eating 1 biscuit with preservatives. Heating food once is better than eating repeatedly reheated food. How do we make informed choices? Thanks so much for this myth-bursting session both!
