It speaks to the quality of this dish that I was able to get a really good result without so much as looking at a recipe. I am not usually a fan of cherry tomatoes but it works. As someone who has now made this, here are some tips: When he says be generous with salt, TRUST HIM. The flavor of cherry tomatoes is extremely distinct and sweet, so they need a lot of help to become a good pasta sauce. You can always salt your pasta after the fact, but it’s way better if you get it on the first try. If you want the sauce to be even creamier, add a bunch of cheese. I used Romano in mine. If you think the tomatoes are done reducing, you’re wrong. Go a little further than you think you need to and the sauce will be richer and the cellulose will break down better.

Cherry tomatoes are expensive where I live. Using a can of diced tomatoes gives equivalent nutrition at a much lower price, plus it's pantry stable so you don't worry about throwing it out if it's around too long.

This dish is called "Pasta all'arrabbiata", it's a really common dish from Rome/lazio region of italy. It doesn't need to be made with cherry tomatoes sauce (Ciliegini in italian) but I prefer it this way because of sweetness and another tip, put pecorino cheese on top! Don't use parmiggiano or others parmesan like cheeses

@@ggbfree Yea. You could blanch and peel them. It would also be difficult to get cherry tomato sauce from a store. So if difficulty is factored in, the usual san Marzano is a competitor. But during the summer time, if you grow your own cherry tomatoes; I'd prefer sauce made with them.

As an italian I absolutely love this! It is a very common and beloved variant of pasta al pomodoro (with and without hot peppers), especially in more rural areas of the country where the tomatoes will be homegrown. My father used to make this dish often during tomato season and it's so easy to make that it's actually the first thing he showed me how to cook when teaching me! Yet it is so delicious, definitely a must try. A little advice for anyone that wants to try and cook this dish: if you can, get your cherry tomatoes at different stages of maturation. It will significantly enrich the flavour spectrum. Experiment with the proportions to create your perfect mix. You will be surprised at how much the flavour can change

An easier and cheaper recipe is pasta with tuna, tomato sauce and onions, which is more or less the staple lunch for pennyless italian uni students. Chop and brown a bit of onion (doesn't have to be a whole onion, up to personal preferences) then add tomato sauce (half a bottle for 1-2 people should be enough), a pinch of salt and then a can of tuna (i personally throw out the tuna oil but that's up to personal preference too) and you have an easy 5 min sauce that should be fairly inexpensive too.

I just cooked this recipe, surprisingly very tasty. I didn’t have olive oil so I use a little bit of vegetable oil and butter mixed and it turned out very yummy. PS: And yeah added a bit of crushed oregano when frying garlic. It elevates the smell and flavour.

A few advice from an Italian to make this pasta even better: first, crush the cherry tomatoes with your hands in a bowl after cutting them in half, they will release a lot of water that you can throw to intensify the flavor. Second, to make it in a different way, cook some red sweet onions (even better if you can find Cipolla di Tropea) and, the final touch, use oregano instead of basil. Buon appetito!

For example it goes perfectly with fiordilatte mozzarella (not bufala), with a pinch of oil, salt and origano. The recipe I gave you is the one my aunt makes and you should trust her, she is one of the best cooks I know.

For those who had a hard time compromising on some of these ingredients due to the price here r sum tips: - Cherry tomatoes are expensive as well where I'm from, just use a normal tomato and cut them up into bite sizes, but they'll produce a lot more juices so when u add pasta water just use half than usual - for the olive oil, although for pasta it's a must, but hey we just need food lmao, so use any cooking oil that does not consist strong fragrant nor taste, for example like palm oil - for the Basil leaves just use the dried ones in any local convenience store, or just like he said, steal em from a neighbor or smt lmao - For cheese of course the most appropriate choice for pasta is parmesan, but as a college student shit is expensive as hell, so just pick whatever the cheapest, just use any cheese for example like white cheddar, dry em up for a while for it to be similar like parmesan dry em up for a but and then grate em. I know these kind of tips doesn't make this dish not that authentic anymore, but hey we gotta eat smn fine dining style once in a while, Hope it helps and greatest luck for any college kids out there

Someone left some homegrown little orange cherry tomatoes in a free bin for neighbors. Snagged them up and made this with red chili flakes and dried basil. SO GOOD and very easy and affordable. Making this again for sure. Had this short on repeat while I cooked haha. Thank you!

I love this recipe. Instead of garlic, I use thin sliced red onion as my flavor base or shallot. Also instead of chili, I use white pepper and oregano. Add Parmesan and butter to make it super tasty!

My favorite way to do cherry tomato sauce is literally just olive oil and cherry tomatoes in a pan. No extra salt. No garlic. No peppers. And I love seasoned food. But just cherry tomatoes and olive oil cooked together and the tomatoes get a little char on them - so delicious. I don’t even eat it with pasta, fresh bread or even not fresh bread just dunked right in the pan. Probably one of my favorite things in the world. It surprises me bc I cook with a lot of seasonings typically but whenever I’d add something to my tomatoes, I’d be like, I just wish I tasted the tomatoes more prominently. Then I just did tomatoes in olive oil and I can’t look back. I’ve tried it with butter and of course that’s fine and delicious but plain olive oil is superior bc you just get that delicious tomato flavor. I think it keeps me from getting sick some years bc I can eat so much of it.

Thanks for the recipe, my parents were away so I had to cook dinner and I wanted to make pasta but was like meh only pasta is boring... Then I remembered this video and thought yea let's try it why not, I didn't had the exact ingriedients but I made something up and it was super delicious. My parents did a big garden of veggies this year and I got a ton of cherry tomatoes, the kind that basically tasty like candy. I did this recipe and holy crap that was the best pasta I’ve ever had. I added some grilled chicken to it as well.
