These tacos are the bomb! Please please try them with Oaxaca cheese, they are amazing when the cheese oozes out and crisps up like the tortilla! Little crumbles of Cotija cheese sprinkled on the outside of the shell while still hot - my son (he is an adult) said it was like a magic shell that just completed the taco. The mozz and jack are awesome too! Thank you for your twist and your video!!! I am watching every version I can find!

I grew up in Mexican kitchens and girl, you slayed it! I'm unable to cook anymore, sadly, and also I moved to another country where folks are terrified of food with flavour so I have to eat bland, underseasoned/unseasoned food and it's killing me. Totally shouldn't be watching this 'cause my mouth is watering, I miss food so bad. Didn't realize how much food is intertwined with culture & identity til I couldn't make or eat good food! You can't even get tortillas here 😭

I made this over the weekend and it was soooo good! I couldn't find the New Mexico Chiles, so I used Ancho Chiles. The only issue I had was the corn tortilla shells fell apart when I dipped it in the sauce. I will definitely make this again but will find a different brand of corn tortillas.

I live in Texas where we love our Mexican food. When I make enchiladas, I lightly fry the corn tortillas to soften them before I dip them in the gravy and stuff them. I bet it is traditional so they don't fall apart like you experienced.

I always thought birria was goat meat, but I guess you can substitute the goat for beef as long as you cook the meat in the sauce.
