I made a carrot cake yesterday but used The Preppy Kitchens recipe and John uses 3/4 cup unsweetened applesauce and only 3/4 cup of oil for cake resulting in a moist cake but I just came across your recipe and its very nice as well. If you do not want all this oil in your cake, when you shred the carrots put them in the bowl you are going to mix the cake ingredients and store in the refrigerator with a cover on so the liquid separates from from the shredded carrots. Also for this size cake I add 1 tsp each of cinnamon, nutmeg, and vanilla. For us men that do not use all these machines that need to be cleaned it is easy to mix by hand. In Costa Rica I made a carrot cake for 100 people at a wedding and it was the first thing that was totally finished first over the rest of the food and it had 24 pounds of carrots in it. I hate dry cakes.

Hi Natasha 😀 Before adding the topping, spread the sides, turn the cake on the side, roll the sides onto the crushed nuts, then decorate your top of the cake. Easy way to decorate the sides with nuts.

Before baking the whole cake, can I take a little out and bake just one cupcake and see how that comes out? Then bake the rest of the cake or will the rest of the batter dry out by then? Love watching your recipes

Made this cake for my hubby birthday today and it was one of the best carrot cake I had ever eaten! I don't really like to eat overly sweet cake. So instead of adding a whole cup of sugar, I add a bit above 1/2 cup when making the cake. For the frosty, I added 1&1/2 cups + 2tbsp of powder sugar and it turned out perfect for me. Not overly sweet like those carrot cake from the store. I once bought a carrot cake from the store and it took me and my family a week to finish eating it because it was way too sweet. But with this recipe and the sugar reduced that I did, it didn't even takes us 8 hours to finish it. Thankyou for the recipe! This will be my go to carrots cake from now on!

I am very new to baking cakes. However, on my first attempt I discovered an EASY way to put the nuts on the sides of the cake. Get a flat cardboard (size of a playing card) and hold the end at an angle to touch the bottom of the cake and the top to be slightly open. Then slowly pour a bit of nut at a time and go round the cake. As you go round each time tighten the angel so the nut are poured higher. It is quick and easy. and works well.

Wheres vanilla in frosting, wax paper under the cake to pull out for perfect frosting, and extract for the cake. Im new to your website and im loving your recipes. Im an accomplished baker and cook and i truly believe we all can learn something new from anyone. As for walnuts on the side, Ina Garten, my personal favorite cook in the food network channel, and Gordon Ramsey of course, but Ina simply leans the cake a little and presses nuts on the perimeter letting some fall that didnt adhere. You can google her and find her technique. Whew! With that said, i love your channel!

It's a really good recipe I've tried this one but I modified it and if you try it with just using one and a half cups of shredded carrots and one baby food jar of carrots for toddlers and pour that in there also oh man you get an intense flavor of the carrot cake it's so good you really really should try it both ways

Also try 1 cup of shredded coconut flakes in d batter. If using sweetened coconut flakes reduce the sugar in d recipe, so it wnt become overly sweet.
