Starch Solution Brownies (Makes 16) Page 313 in the book
2 tablespoons Ener-G Egg Replacer
1 cup unbleached all-purpose flour
2/3 cup Fat-Free Cocoa Powder
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup chopped cashews or walnuts (optional)
1/2 cup Sunsweet Lighter Bake (see recipe below)
1/2 cup unsweetened applesauce
1 cup granulated sugar
1 teaspoon pure vanilla extract
Preheat the oven to 350F.
In a small bowl, whisk the Egg Replacer with 1/2 cup warm water until frothy. Set aside.
In a medium bowl, whisk together the flour, cocoa, baking powder, baking soda, and salt. Stir in the nuts, if using. Set aside.
In a small bowl, whisk together the Lighter Bake, applesauce, sugar, and vanilla. Stir in the Egg Replacer. Stir this mixture into the flour mixture just until the ingredients are combined.
Spread the batter evenly into a nonstick or silicone 8” x 8” baking pan, smoothing the top. Bake until a wooden pick inserted in the center comes out clean, about 30 minutes.
Set the pan on a rack until cool, about 30 minutes. Cut the brownies into four equal strips in one direction, then four in the other, to make sixteen brownies. (If using a silicone pan, flex and invert the pan to release the brownies onto a platter before cutting them.)

Thanks for sharing! I just made these. I subbed whole wheat pastry flour and did a full cup of applesauce. I also used flax egg instead. These are probably the best brownies I’ve ever had, plant based or omni! I’ll definitely be making these for family get-togethers and potlucks! Thank you!!

Robyn, so you substituted a full cup of applesauce instead of 1/2 cup liquid prunes and 1/2 cup applesauce? And for the flax egg, was that 1 TB ground flax seeds and 3 TB water? That's the recipe I usually read about.

@@danriley3241 i did. one cup applesauce instead of 1/2 c applesauce + 1/2 c prune stuff. and i did two flax eggs (2 tbs ground flaxseed + 6 tbs water, set aside for about 10 minutes).

@@robynroush8337 I was thinking of trying aqua faba but I have plenty of flax and like that you've already tried it your way. I don't want to buy egg replacer as I will hardly ever use it but have plenty of flax seeds since I grind them every morning for my oatmeal. Thanks Robyn.

@@danriley3241 one thing i find i love about this lifestyle is that i almost never need to make a special trip to the grocery. i have everything i need almost every time with just my weekly trip. in this case, subbing applesauce and flax eggs worked beautifully and no additional ingredients to hang around never getting used, like that egg replacer (and prunes)! i’m with you on that! lol! good luck with yours! i’m VERY pleased.

@@robynroush8337 Gonna bug you one more time! Did you use regular cocoa powder or dutch processed? I have both and read that dutch type makes better cakes etc. but can be an issue when dealing with baking power or soda as far as rising goes. Joey didn't say which he used. I'm obviously not a baker :) Nutritionally, dutch is simply more alkaline which is not a bad thing. Droste pioneered it Just wondering. Thanks again.

Again with the bloopers! Its like a treat for those of us who hang around til the end. Love the banter and the looks 😂. I will save this recipe and since we don’t have sugar, I’ll try to use dates instead. Anything sweeter than that and I’ll eat the whole pan in one setting.

Hi Joey. Another great video. I always find the banter between you and your son funny. I have a couple of suggestions for alternatives. You could try 1/2 cup of mashed banana with the 1/2 cup prunes or even a full cup of mashed bananas instead of the prunes. I have used mashed banana to replace butter or oil in muffin recipes and it usually works great and adds moisture. Banana also goes with chocolate in terms of flavor. I would think you could use a flax egg instead of the egg replacement, if you are ok with flax seed. I believe the formula is 1 Tablespoon of ground flax seed added to 2 1/2 Tablespoons of water. Allow it to sit to thicken for a few minutes. Another tip is to store ground flax seed in the freezer to keep it fresh longer.

Do you use 1:1 ratio with amount of banana vs amount of oil/butter?

@@kathrynhensel8843 yes it is a 1 to 1 ratio for replaced oil or butter. In muffin recipes you need to use a liner in muffin tins since it will stick otherwise.

Flax eggs are great replacements! I think Joey was going for a no fat brownie which would eliminate the use of flax seeds for him. There is 4.3g of fat in 1 Tbl of flax where there is 0g fat in the BRM egg replacer. It is nice to have options!! :)

Hi Diana. I wouldn't say I am annoyed, but I am totally use to it being a one man show. So I plan out every aspect of it. Having an extra person throws that off for me. But of course I want to include my family in the show when they show interest. But yes, I am always "off" a bit when there is another person with me. I think thats where the comedy of it comes in. @@PlantBasedDads I love Lexx's comment, "that's supposed to be a brownie?!" Lol. Then it all comes together. I would really like to try this without the granulated sugar but am certain it won't taste as good. Not sure what to replace it with? Maybe a drop of liquid stevia?

Hi Joey Hi Lexx, this was quite entertaining, smiled all through it, AND I love and will be trying these brownies right away. I have everything on hand, sorta. I've had wonderful experiences with subbing my flour needs [for sweet baked recipes] with oat flour from rolled oats in my blender. I've also had good luck with date syrup and apple sauce. I think date syrup is as thick as prune syrup but sweeter so no extra sugar is needed. I've changed my unsweetened chocolate powder to cacao powder for everything from smoothies, chia pudding to banana n'ice cream. The depth of flavor is amazing and it is fat-free. I'm going to give your recipe a go with my subs and let you know if it works. Love from Connecticut.💕.

I have a milk chocolate addiction so I think I will make this. I i have the digital edition of The Starch Solution book. I've stayed away from bread and baked goods. But I need to make this to satisfy that chocolate addiction. I've eliminated oil, sugar and most salt, and soda, caffeine and other junk food. Maybe one day I'll eliminate chocolate but I'd rather try to plan it into my eating style. Thanks for the tips. Linda

Brownies look 😋 Joey and great to see your son but I would rather prefer not to use the egg replacer because if you check it may contain oil so what's an alternative?

There are several alternatives. You can make a flax egg or chia egg (1 Tbs. ground flax or chia plus 3 TBS warm water) . I usually open a can of garbanzo beans and use 3 TBS of the aqua faba- the liquid from the beans) .

I just checked the BRM egg replacer and it is made of potato starch, tapioca starch, baking soda and psyllium husk. 0g fat per 1 Tbl. Hope that helps!!

Hi David. Like someone said below, no oil in the Bobs Red Mill egg replacer, jus starches and husk. So it's fine to use. I was careful to make sure it didn't have oil because I wanted the brownies to be completely fat free for sure. I am just making the recipe out of the book but you can use a flax egg, It just wont be fat free. Thanks so much for watching.
