I never really liked atchara until we had to make ours for our Home Economics class. That time, it was the first time I actually ate more than just a spoon and tasted the fullness of atchara (of course, cuz this is a graded activity, we had to make sure our atchara will taste good). I ended up developing love for it.

Anne and her facial expressions..😂😂😂😂 Anything fried, grilled is the best way to pair atchara... Mine is with a fried pork chop or grilled chicken.. Even Lechon kawali... Yummy!

I also enjoy the labong (bamboo shoot) atchara which my mom makes since she gets tired of eating the papaya version. It had a nice crunch to it. Missing it so badly coz I can't go home to the province right now due to this pandemic 😢.

If you can get your hands to some bamboo shoots or "tambo" as we call it from our province, its good for making atsara as well. Aside from the tambo we usually put some bittergourd as well aside from the usual carrots. Our atsara usually tastes a bit sweet, a bit sour or tangy, with some heat due to our sinamak. What I love about it also is the crunch you get with every bite. Best paired with some daing or danggit in the morning. Oh God how I miss eating provincial food.. :'(

Just my opinion, my be if you want to make kimchi with papaya, try to dice it instead of slice it in thin form. Because fermentation will produce heat so the vegetables will be "cooked". I guess the papaya texture in the kimchi version is like daikon (radish) kimchi. Any way your video is very informative and evoke my curiousity in making "papaya kimchi". Greeting from Indonesia. P.S: In Indonesia, the word Pickles is equally translate as "Acar" which I don't know if it is cognate with the word "Atchara". P.S: In Indonesia it is rare or even never use young papaya as pickles, would love to try it. We usually use mix of sliced cucumber, carrot, shallot and bird's eye chili with vinegar.

You should put water on top of your fermentation jar not too much before putting the cover so there’s no air will go in/go out. I just saw it based on Li Ziqi’s youtube channel. I hope it’ll help. 🤗🍅
