Easy fruit loaf cake recipe. Easy Baking

Surprise your loved ones with this easy and delicious fruit loaf cake! Everybody will ask for more.
This fruit loaf cake recipe will quickly become your favourite! So fruity and flavourful, it will be very hard to resist another slice.
RECIPE:
Prep time: 15 minutes
Baking time: 1 hour 15 minutes
Total: 1 hour 30 minutes
125g (1/2 cup) room temperature unsalted
125g (3/4 cup) sugar
3 eggs
1 heaping tbsp jam (any flavour)
60ml (1/4 cup) milk
250g (1+1/2 cup) plain flour
1 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp ground ginger
1/2 tsp ground coriander
1 tbsp baking powder
Pinch pf salt (1/8 tsp)
400g (2 cups) dried fruit cake mix (you can add less, for example 300g (1+1/2 cup) if you wish.
Bake in a preheated oven at 170C / 345F / Gas mark 3.
Baking time: 1 hour 15 minutes, or until toothpick comes out clean.
Every oven is different, cooking times may vary slightly, keep checking it every 5 minutes after 1 hour and 10 minutes of baking.

I made this cake and it was awesome, even though the only spice I added was ginger (didn't have the others so just left them out). I'm usually not very good at making fruit cake but this is by the far the best I have ever made. My husband agreed, between the two of us we ate every crumb over several days! Thank you!

That looks really good, i've saved it to watch later, i will definitely make this. It's the first time ive seen jam and coriander in a fruit cake. When i'm using a loaf tin to make a cake when i put the liner in i put a dab of marg at each end of the tin and both sides to hold the case in place as once the paper fell in and i had to scrape the cake out and start again. I am from South India near Chennai (Ranipet). Can I add almonds, cashew, vanilla essence and chocolate powder in it. Normally we used to add the above mentioned items when we prepare a mixed cake. Hi! I use ready mixed fruit, it contains: sultanas 50%, currants 18% , raisins 18%, candied citrus peels 14%, lemon peel. You can use any dried fruit of your choice, you can also add nuts if you wish 🥰
