Easy low sugar strawberry rhubarb jam |no added pectin |water bath processing

Strawberry rhubarb jam is the first jam I make every spring. This jam is so good that it rarely makes it to the winter. Growing rhubarb is easy, and so if you like strawberry rhubarb jam, start your own rhubarb patch. I like to add vanilla bean to this jam, but you can omit it.

I just found your channel. I can’t wait to try some of your recipes! I have everything I need to make your hot pepper jelly recipe except frozen cranberries. I’ve been to several stores trying to find some. Can I just substitute the cranberries with more red bell peppers? What would you suggest?

Welcome! So glad you found us! I wouldn't add more bell peppers. You can just leave them out and the jelly will still turn out but it will be paler in colour. The cranberries add colour to the jelly and a little bit of additional pectin. Last year I made some with 1/2 cup of frozen raspberries. It did change the flavour slightly. The skin of red onion also is good for adding colour but I would first try a batch with just omitting the cranberries if you can't find them. Then experiment with adding onions and see which flavour and colour you prefer. Happy canning!☺️
