I have made this recipe twice with one substitution, liquid mustard brushed on before the rub. Both times, the ribs turned out fantastic! Simple ingredients with an uncomplicated prep. It’s my go-to for ribs now.

I tried this recipe two weeks ago and it was amazing! I like the "low and slow" temperature and time. One change was that I put the ribs over a cup of apple cider vinegar (using a cookie cooling rack) but otherwise it was simplicity itself. Glaze the last 30 minutes and then a quick broil for bark.

I use a pan with a wire rack insert so the ribs don't end up sitting in their own renderings and the rack allows air to circulate under the bottom. I also use the no wrap method as I think they just get too soft when wrapped in foil.

I use salt, black pepper, garlic powder, onion powder, smoked paprika, smoked ghost chili, around ten star anise for full rack of ribs, and I insert a dozen cloves in as well. I add honey for the sauce (around 4 to 6 tablespoons).

Running some hot tap water over the membrane for a little bit makes it a lot easier to takeoff, it softens the fat between the connective tissues that hold it on. When they make them in the oven because the grill isn’t an option I like to smear them with liquid smoke first which also helps the rub and spices stick a little bit better too. Kind of like how some people use oil or mustard as a binder. Even though you’re doing it in the oven are usually like to give it the first hour to hour and a half uncovered to allow that surface in the rub to form sort of a crust. It will never quite be like smoking them but it still gives a little bit of that crust and texture, then I cover it or wrap it to finish cooking and tenderize it. Also every cut of ribs in the amount you have in there is going to make a huge difference to cooking time. Three hours is a good target but a smaller rack like baby back which are the same as St. Louis in spare ribs just with different pieces cut off or just a particularly small rack can easily be done in 2 1/2 hours. I don’t like them to get quite a software they’re more like pulled pork I still like a little bit of texture to make them feel like ribs and it keeps more of the natural juices in the meat and lets a little more of the water out as opposed to wrapping and steaming the whole time which makes it very tender but also pulls a lot of flavor out with the juices, letting the juices heat up and cook the meat and the water evaporate cooked them and preserves the most flavor and adding time and the wrap and steaming will tenderize the meet but the farther you go with that the more that flavor is going to come out and be replaced by the steam of the collagen and fats break down and drip out of the final product. Those look good and making ribs at home with an oven is definitely doable or even a pressure cooker and they can come out great, I don’t think you’ll ever taste quite as good as smoking or grilling but you can get pretty close without having to put in a ton of effort and I still come out very very good.

Thanks for the added info Shane. I’m wondering if the initial baking time uncovered also should be done at 275 degrees or can it be done at a higher temp, like 350 and then cover it and lower the temp for the remainder of the cooking time?

@@berneemartin8859 It can be in your reach the right temperatures but doing it slowly can affect texture and tenderness. You can cook stuff hot and fast or low and slow and control a lot of that. And if you start with a decent piece of meat there are multiple ways you can do it but if you want a specific texture and tenderness and even flavor profile time is just one more element of that process. You can definitely cook it faster for a shorter amount of time but it’s all about finding balance to get exactly what you want

I am so thankful for you! I had never done any kind of ribs before and the other day I bought some St. Louis ribs without knowing how to make them, but with the intention of at least trying. Anyway, I searched for recipes until I finally decided to try yours today. It’s so easy to make and I’m so happy I could use the oven! I did substitute the powdered mustard with liquid mustard though. Nevertheless, they came out perfect!!!! My husband almost ate the whole rack himself! He gave me an A+ lol. I highly recommend to everyone especially those like me who have/had never done ribs!

@@irmaadams7780 I actually leave them 6 to 8 hours in the oven and it's delicious! No need to add sauce if you don't want too. If you wrap them up well you get a bit of juices from the meat itself 😊
