Made this sauce yesterday, mind blown! It tastes exactly like egg yolk sauce! I couldn’t believe it! Campari tomato was key. I also had some black salt on hand. So happy that I can have my favourite “egg” Benedict while following the plant based way of eating. Even my non vegan housemate loved it!

It's insane how good it is, right?! Now you know why I had to find a way to make it align with how I've been trying to eat. My version is a lot "lighter" which just means you can eat a lot more of it.

Looks so good, glad to see how many times you referenced Lauren Toyota as the originator of the sauce, everyone needs to do that. Interesting how you feel about the volcanic salt, it's great to acknowledge that, we don't all have to like everything do we.

I contacted Lauren to ask how she would like me to approach using her recipe. She was very sweet and allowed me to reprint my version on my site. I would rather have the respect of those that I respect than try to pull of stealing a recipe and getting away with it. Credit is needed where credit is due. And black salt is not my thing. Haha.

I made this sauce yesterday; I used a plum (roma) tomato and substituted white beans for some of the cashews to reduce the caloric content. I also used a bit of black salt, and for the "egg white", silken tofu, extra firm. OMG! This was amazing. I am not 100% vegan yet, and eat eggs for breakfast perhaps once every 2 months, but years ago I stopped eating "runny" eggs due to the risk of salmonella. This recipe brings back the texture and taste of those "runny" eggs, especially when paired with the tofu mimicking the "white" of the egg. Woohoo! This recipe is a keeper. I am not familiar with Lauren Toyota's recipe, so thank you for sharing it, and especially thank you for making it more WFPB. I would have been put off by the amount of oil in it had I come across that recipe on my own. So, once again, thank you!!! 💚

I'm so glad you enjoyed the recipe. Sounds like you're on the right path, and you have the right mindset. It's all about making a vegan or plant-based lifestyle work for you, and finding ways to get the same food experiences without the animal products. It takes some experimenting and tweaking, but before you know it, eating this way will seem like the only way to do it. You'll wonder why folks ever used eggs and dairy in the first place! Haha.

@@MonsonMadeThis Thank you for your encouragement--it means a lot to me! I first began to make the switch back in 2012, making me the slowest "transitioner" I know lol! But I believe better is better, and today I eat far less than 10% of my calories from animal products.

I modified her cheese sauce for the same reason. I like food, and I know I will gain 10 pounds if I eat the cheese sauce on a regular basis with all of the oil in the original recipe. The sandwiches look super yummy.

Hollandaise sauce is traditionally served over asparagus and were are in the Asparagus Triangle So the sauce will be useful for treating my partner to some asparagus and Hollandaise sauce. I would welcome some ideas for using tempeh

The first test I made of this sauce, I served it over broccolini, which is kind of like asparagus with broccoli at the ends? I've never heard of the asparagus triangle! Sounds amazing. I think you're going to be happy with it. Let me know how it turns out!

Give it a go! If it's a Vitamix that just heats with friction, I wouldn't reccomend it. But if it has actual heating elements, it it might work. My only concern is over-blending which could lead to a more "whipped" texture.

I've only tried tempeh once, because the LightLife brand was just disgusting. It was just moldy, hard soybeans, stuck together. I wanted to like it. Is there a good brands where maybe the beans are softer, and maybe not whole?

@@bonnie_gail It contains sulfur, so is LITERALLY smells like rotten eggs. Folks who love it say it mellows out a bit as it cooks, but why would you intentionally make your non-egg dish smell and taste like the worst aspect of an egg dish? I don't get it. But that's just me...
