Do you remember pineapple upside down cakes? That's so 80s! But that's exactly when I was growing up and my mom taught me how to make a delicious "bizcocho al revés." This recipe brings a lot of great memories of being in the kitchen with my mom and baking together. Here, we teach you how to make it from scratch so you don't have to rely on a cake mix.

Ingredients:
Cake:
8 tbs or ½ cup unsalted butter at room temperature
¾ cup granulated sugar
2 eggs at room temperature
1 tsp vanilla extract
⅓ cup sour cream
1 ½ cups cake flour
1 tsp baking powder
¼ tsp baking soda
½ tsp salt
⅓ cup whole milk
Topping:
¾ cup brown sugar
1 can sliced pineapples
Maraschino cherries (15-20)

Honestly, this is one of my favorite desserts! But, I’ve never made the cake mix from scratch or added the sour cream for extra moisture. Looking forward to doing that. Thanks!

Do this bums me out totally my husband's diabetic and that's way too much sugar while I'm going to see if I can tweak the recipe and do it with some Splenda but I don't think they make Splenda brown sugar man thanks anyways Joe it's beautiful and looks very appetizing just too much sugar overload for us good looking out though

Hi Lisa, Definitely not the recipe to share with your husband as is. I would also recommend you use either fresh pineapple or a low sugar can and omit the cherries. Try reducing the sugar in the cake mix to 1/2 cup or substitute with splenda. Let me know how it goes!

They do make splenda in brown sugar. The thing is you cant mix brown and the white sugar.

Hi Mia! I am sure that it made it to Puerto Rico as part of the American influences but it has surely been adopted in Puerto Rico as a go to cake to bake at home.
