Ube mochi are vibrant purple bite sized pieces of rich, buttery, chewy goodness. These delicious dessert treats are simple to make and perfect to share with family and friends.

UBE MOCHI Recipe
Ingredients:
4 eggs
2 cups fat free milk
1 can (13.5 ounces) coconut milk amzn.to/2Mts3GM
1 teaspoon vanilla
2 teaspoons ube extract amzn.to/3fjvlZc
1 box (16 ounces) mochiko flour
2 cups sugar
2 teaspoons baking powder
½ teaspoon salt
1/2 cup unsalted butter, melted
Directions:
Preheat oven to 350F.
In a medium mixing bowl combine wet ingredients: eggs, milk, coconut milk, ube extract, and vanilla. Stir to combine. Set aside.
In a large mixing bowl combine dry ingredients: mochiko flour, sugar, baking powder, and salt. Stir to combine.
Add wet ingredients to dry. Stir to combine. Add butter and stir again until well combined.
Line a 9x13 pan with parchment paper. Pour mixture in pan and tap the pan to release any air bubbles.
Place in oven and bake for 1 hour or until the top is golden brown.
Let pan cool completely before cutting and enjoying.

I've tried chocolate mochi and butter mochi. I've never tried ube mochi before, but looks so yummy. I gotta try this since I love anything with ube ☺

I made a mochi cake for my daughter’s half birthday. It was soooo good but I can’t wait to try this recipe! One question, do you store your mochi in the fridge after you make it?

I do not store it in the refrigerator. It will draw out the moisture and harden. Store in an airtight container at room temp for a 2-3 days.

This is a chewy mochi consistency recipe. I'm sure you could adjust the recipe to make it more like cake. Using a different flour would likely be the start.

How did you get the parchment paper to stick so well to the pan before you poured the mixture in? Can’t wait to try this out 😊

You can spray a little non stick cooking spray before setting the parchment paper in the pan.

LOL I didn't know I can make a cake with glutinous rice flour. I'm gonna try it, thanks for the recipe. By the way, In the stores where I live, only sell chinese brands. Hope gonna get the same consistency

these turned out great! very soft and tasty. if you want them chewier, i would probably add a little more more mochiko flour. i’ll definitely make this again!

No topping on it. That's the crisping that happens when you bake it. It makes a crackling effect on the top.

I have Ube powder instead of the extract, not sure how that will effect the recipe, I’ll see how it goes and let you know. My Co-worker made this and shared your recipe, they were awesome!

Ube powder has a less concentrated flavor than ube extract and will likely change the consistency of the mochi. You may have to play around with the recipe.

You sure can. Use an 8x8 or 9x9 pan. Bake time will depend on the pan type and the thickness. I would start checking it at 45-50min, but it could take the full hour and then some. Let me know how it goes. Thanks!

So I made half the ingredients, followed your directions, and baked in a glass 8X8 for 50 minutes. It is delicious!! I used almond milk (can’t do dairy) and it came out great! Thank you so much Relle! Can’t wait to try more of your recipes!! Our family was supposed be at Ko Olina resort this week!!

There’s no topping on this. You could use coconut flakes if you wanted. There’s an ube drizzle recipe with my ube mochi waffle video.

It came out great EXCEPT mine was stuck to wax paper and I could not remove it off the cake Had to cut away sides and bottom to get rid of paper. Any advice????

Sorry to hear that. I do not recommend using wax paper while baking this. You can try parchment paper or just bake directly in the pan with some non-stick cooking spray. Hope that helps.

what is the proper substitute for mochiko flour? I can only see rice flour, glutinous rice flour, cornstarch, and potato starch on our grocery shelves. Thanks! would love to try this soon

If I have access to ube and ube extract which should I use? I'm more than happy to put in the extra effort to use ube instead of extract. Just not sure how that would change the recipe.

You can use ube instead the extract if you wish. You may have to adjust the recipe though. This recipe uses the extract.

I made this today, I followed all the directions and put the right measurements but my butter Mochi had more of a sticky chichi dango Mochi kind texture instead of a foodland butter Mochi bar kind ( lol does that make sense?). It also came out suuuuper buttery/greasy and more on the wet side. When you microwave the butter are you supposed to let it cool off completely before pouring it in?Idk what I did wrong 😫

Sorry to hear that. The texture here is more like a dense chi chi dango butter mochi than a cake like mochi. Overly greasy usually means the batter wasn’t mixed well enough. What you can do is take a clean paper towel and blot up the excess butter.

I have not tried that, but I suppose you could try it. You can order mochiko flour on Amazon if all else fails.

You can use any milk. Fat free milk keeps it a little on the lighter side.

The browning is from the caramelization and crusting of the mochi. I wonder if you bake it covered with foil if this would help? I haven't tried it, but worth a shot.

Aloha. I have never tried that. You'd have to adjust the recipe to account for that. Ube extract is concentrated so you don't need a lot of it. When you use the ice cream it won't be as strong of a flavor in a small amount. It also has cream and sugar in it, so the recipe will likely need to be adjusted. If you try it, let me know.

I've never tried it. Eggs give structure and stability to the batter. Maybe you could try an egg replacement ingredient that could do the same. Let me know how it goes. Have a great day.

There will be a slight jiggle, however you added extra taro in the recipe so that could make the cooking time longer. I'd try to put it back in the oven for a little while longer. Let me know how it goes.

Fresh yam is very difficult to find in the Hawai'i and the US. They do sell powdered or frozen grated ube. You can also use ube halaya or jam.
