Have you tried using Tofu paper/sheets which is also available at most Asian stores. It's thicker than rice paper & Yuba (tofu 'skin' that forms on soy milk) and is fry-able. Cut the sheets with a knife into rashers. You can use the same marinade as your video.

I got this idea from Simnett Nutrition, but he suggested to marinate a block of tofu in the same marinade and cut thin slices of it and add it to your BLT to make it more hearty and add some protein. You actually can’t even tell it’s in there and it helps to fill you up and keep you satiated!

Your bacon marinade is my go to. It's so delicious. I found that you can just cook it on a flat top griddle too. I tend to do that more often than the oven method just because I usually make it in big batches and I can do more at once. I cook it to just shy of how crispy I want it because just like the oven method, it gets crispier as it cools. Also the marinade makes an amazing tofu or tempeh bacon if you omit the nooch.

I had to bake it longer too. But it was surprising good, I added a bit of salt to get that salty bacon flavor I remembered, I only did that cause the only soy sauce I had was low sodium. It’s weird cause I know it’s much healthier, but I still felt guilty eating it all. 😂

We were out of nutritional yeast so we omitted it and used white pepper and a 1/2 tsp cornstarch. It was really good. We added a little more onion powder, liquid smoke and added black truffle oil. Then we tried another batch with just a bit of jarred jalapeno brine. We also stuck two together and then both sides. If you let sit for about 20 seconds it turns into a single disk and is easily cut into strips with sharp knife. Great recipe though. I am going to have fun playing with this recipe. We made bacon for on top of our spinach salad for our family dinner. Thanks again!

You can place two rice paper sheets together, then wet them, and then cut them as one sheet. This way no matter how you cut you get two strips the same size. I also saw on another video to throw some course salt between the two sheets. It makes little bubbles and ads to the flavor.

I would stack the sheets together first like dip in water 1 sheet then the 2nd sheet dip and stack on first sheet then cut in strips so it would eliminate the waste of sheets when they fold in together. Then just dip in marinade (the doubled strips) place on baking sheet...easy peasy. I do tofu bacon soaking the extra extra firm in the store container in my created brine, slice then and pan fry with alittle peanut oil ( allows higher heat) I do add A little coconut or dark brown sugar towards the end to create carmelization yumminess😋 I think rice paper is the only thing left on shelves these days going to grab some to make the vegan bacon version..great job thank you!
