Video recipe how to cook pasta (macaroni) on Italian meringue. I’ll tell you about the nuances of how to cook this capricious dessert. Some call this dessert macaroons, but that's wrong. The correct word is macarons or pasta.
On the Italian meringue, pasta is more accurate, with a beautiful skirt, without voids, as they say - "fleshy".
In the video, I tried to talk about possible mistakes, show all the stages and points that you should pay attention to.
Ingredients:
Egg white (meringue) - 55g
Sugar (syrup) - 150g
Water (syrup) - 38g
Egg white (marzipan) - 55g
Powdered sugar (marzipan) - 150g
Extra fine almond flour (marzipan) - 150g
Baking temperature in a gas oven:
Preheat oven to 180C. Put the cookies on and turn off the oven. Let it stand for 10 minutes. Turn on the oven at 150C and bake the pasta for about 5 minutes.
Baking temperature in electric oven:
Turn on the oven at 150-160C (see your oven) and bake for about 12-14 minutes.
*Ganache classic:
White chocolate (32-34%) - 130g
Cream from 32% - 80g
Pour the chocolate with hot cream, mix and let it stabilize for 2 hours in the refrigerator. Then fill the caps.
