I remember Food Network on TV, back when I had a teevee 20 years ago :) Emeril, Mario, Chiarello, Flay and my favorite - Good Eats by Alton Brown. I feel like when those competitions started, the whole genre degenerated. I haven't watched for the last 15 years at least. Kinda nice to see Emeril doing good old cooking with none of the BS.

I just made this and pretended it was my own... Absolutely delicious it was a big hit with the fam. I cooked the whole thing with a few bay leaves and I didn't have olive oil or essence. Still it's worth the effort and it's only one pan (I served it on rice so it was two)

I didn't grow up with chorizo. But gosh, when I learned about it! So delicious! I hope this is not a sin, but when I made a Louisiana dish and couldn't find andoullie, I used chorizo and it was great.

It was so pretty to watch you put this dish together. I only tasted chorizo one time in eggs and there are so many different ones. I don’t know which one to buy. I have a really nice jar of olives in our refrigerator that would be prefect in this dish. I do want to try this recipe. I love the thought that your sweet mom made it. Thank you for this dish, chef Emeril. I used to watch Food Network 20 years ago, back when the cooking shows were about cooking. I learned what I needed then. I don't really follow recipes, just borrow ideas. But I definitely always make a batch of the Essence and keep it on hand. I buy spices in bulk, so I always have the components. Love it on breakfast eggs. I feel like Portuguese cuisine could be better represented, I hardly know of it. But I feel like there are interesting dishes to discover.

My husband was Portuguese and his mother’s dishes were wonderful…my hardest problem in trying to recreate some of her meals was that here in California,the only chorizo I can find is Mexican, good but totally different…so I substitute linguisa which works, kinda🫤…needless to say, I’m one of your new subscribers…keep them coming!!!

I miss Emeril live . & Doc Gibs band Best show in late 90s never missed an episode . Food network is a joke now. Went to Emerils in universal studios for Easter dinner with family back in 2012 . There was like 15 of us . What a great meal & service never forget it . Big fan
