This time, Chef Konta, head chef of Sichuan Restaurant Nihonbashi from the Sichuan Restaurant Group, operating authentic Chinese restaurants and is owned by Chen Kenichi, aka. Iron Chef Chinese, showed us how to make fluffy stir-fried eggs with tomatoes.
- Ingredients (for 2 to 3 servings)
4 eggs
1 tomato (150g)
40g scallion
10g ginger
1/4 chives
[Seasonings for eggs]
1/3 tsp salt
a little pepper
[Seasonings for tomato]
1 tsp sake
1/4 salt
a little pepper
1 tbsp scallion oil
1 tbsp Chinese chicken soup
1 tbsp starch dissolved in water
[Sweet vinegar sauce]
3 tbsp Chinese chicken soup
1.5 tbsp ketchup
1 tbsp sugar
1/2 tbsp vinegar
1 tbsp sake
1/4 tsp salt
1 tsp starch dissolved in water
