This Sweet Mexican Cornbread takes me back to my childhood, it has always been a family favorite and it’s super easy and quick to prepare, and it is deliciously addictive. You can enjoy it warm or cold and if you love custard and cornbread then this recipe is for you because it’s both in one. I hope you give it a try ❤️

INGREDIENTS _________________
4 C. Fresh corn off the cob
1 14oz. can Sweetened condensed milk
3 extra large eggs
2 tsp Baking Powder
7 Tbs All purpose flour
1 1/2 tsp Vanilla
4 1/2 Tbsp soft unsalted butter
1/4 tsp Salt
TIP: you can use 2 cans of canned corn (drained) or 4 C. thawed frozen corn instead of fresh.

My pan was too big, next time I will use a smaller pan. This is my new “ FRENCH TOAST “ Pan de Elote smothered with butter and maple syrup.
