Asafoetida or Hinge is basically diluted Perumgayam or Perumkayam with rice flour, Turmeric with a binder which is usually a edible gum. Adding Asafoetida is mostly part of Indian Cooking. It has a antibiotic properties. So it is a good thing of adding to foods. I am not a veteran cook or chef. In my experience as a person try various foods with different cultures, it is better not to fry Asafoetida. Better to add after frying. Instead of Asafoetida or Hinge you may add small quantity of Perumkayam directly to any food. It will not gives the bad smell it has.
