I use my pressure canner (also an All American canner) on my Camp Chef love love love the combo. I will take it out back on a calm day (no wind) or bring it in the kitchen with the windows open in bad weather.

Very good vlog🥰 - FYI since COVID like many things vinegar isn’t always 5% even if listed it’s more like 4% AZURE Standard White Organic Vinegar is 11% so you can dilute or use 1/2 the amount 🤗 and it’s Organic!

Have you every tried freeze drying the skins & seed to use as a tomato paste or use the powdered skins & seeds as a flavor boost to soups & stews

I haven't, but I like that idea! It typically goes to the compost. I did freeze dry some tomatoes last year that I can easily grind up and add which I have enjoyed!

Same problem with my stove. I thought there is a standard height between cabinets and appliances. Apparently not. Looking into the electric presto. I think something like that would be good to get me started in canning.

I'm so curious about your freeze dryer! What's the difference between dehydrating and freeze drying? I have an Excalibur dehydrator I've used for years that I've been happy with.

Huge difference. The standard dehydrator essentially cook and dry over a long period of time until crispy, whereas the freeze dryer freezes and removes moisture, which leaves color, shape, flavor, and more even drying. Texture and flavors are different. Huge difference in equipment price tags too.

^ good explanation! Ive found freeze drying doesn't change flavor at all unlike dehydrating. It also takes out more water content so it can last longer in the pantry + Ive found I can make things like garlic and onion powder a lot easier than dehydrating.

Also, freeze drying preserves the most beneficial nutrients out of all your food without killing them like other methods do at different degrees.

I am new to drying herbs - I'm interested in the hang dryer, i know you said you don't use the hang dryer for basil and such but can i still do it? It just will take longer?

Have you ever considered getting or using one of those electric pressure canners? I think their capacity is smaller, but similar to the roaster it would be off the stove. Curious because I’ve considered getting a pressure canner but I’m torn between stovetop and electric.

Freeze drying has become my #1 but there's still a handful of things ill always can!! The freeze dryer is also nice because you don't have to have exact measurements unlike canning.

Awesome!! I do a lot of this too but I need to get a freeze dryer and pressure canner! I bought a steam canner last year and I love it but it does have its pros and cons ! Question- have you had issues with your microwave crapping out? I have a low one over my stove and when my kids cook they won’t turn on the fan(I don’t blame them, sound like a jet taking off in the kitchen) but the steam shorts out the circuit board. I ‘have gone through like 5 microwaves in 10 years. I usually just buy them second hand now but there are times I don’t have a working one( I barely use it anyway)

Not sure what your situation is, but youve commented a few times that the microwave placement seems to be limiting you. 😂 have you thought about getting a countertop microwave and mounting a ductless exhaust fan where your current microwave is mounted?

I haven't done to much looking into things but that would be our best bet! We redid this space about 4 years ago. Not many good places to put a microwave in this space unfortuntly but it would be nice to have it away from the oven so I could fit bigger pots and my canner lol

I don’t know if it’s because I’m using UK conversions, or just not as much info over here, but I find waterbath canning tricky😕 I tried pomonas pectin for jelly and I can’t get it smooth, always turns out gritty. When my canner gets up to temp I can’t seem to step away from it like people seem to because I’m having to adjust the temperature so water doesn’t boil over (stockpot problem maybe?) I really want to get into it but with the extra costs for having things over here, it’s hard to take the dive in investing in it all😅 does anyone else have these issues or am I just a complete noob?😂
