I love how my dad cooks Ampalaya. He's putting corned beef and eggs and konting sabaw. I'm not eating ampalaya because of it's bitterness but when it is cooked by my dad, I found myself eating a lot of it.

I grew up eating ampalaya but in a different dish. Just simply sauteed onion, garlic and pork, then add the ampalaya, vinegar, pepper and salt. Superb 👍👍

My wife and I like to cook ampalaya with atay ng manok instead of chicken and it tastes sooo good. with lots of egg and tomato and oyster sauce. Sarap talaga! It was just an experiment but turned out to be a crowd favorite and household staple haha

A tip i also learned from Kitz Clutszina (a filipino cooking channel) is when cooking ampalaya don't mix it so it won't release its bitter taste, just cover the pan until it cooks. I guess it work cause he fed it to his toddler and liked it. Haven't tried it myself though

I cook it exactly the way you did except that I overcook it so it's really wilted as it helps remove the bitterness a bit and so that the tomatoes would have also incorporated its juice into the dish. My biggest pet peeve when eating vegetable dishes is when I find pieces of pork with skin. I'm just not a believer of the saying "mas masarap pag may konting taba." So what I do personally when I cook is either I don't put pork at all or just to satisy other people in the house, I chicharon the pork bits and put it as topping only before serving. This really enhances the flavor.

My favorite😍. What I usually do to lessen its bitterness is that, I slice it by the grove or lenghtwise (not the usual or crosswise) and stir fry it with carrots and okra (of course with the usual "ginisa" trio of tomatoes, onion and garlic). 🤔☺

Yun oh! isa ito sa pabirito kong Pinoy dish. Napaka simple lang at mas gusto ko talaga nalalasahan ang pait, siguro dahil sanay nako. Kahit ganito lang almusal ko everyday, masaya nako. 😊 Humahanga talaga ako sayo sir lalo na pag sinusubukan mong magsalita ng diretsong tagalog sa tuwing bibili ka sa palengke kaya ipagpatuloy mo lang. My mom usually buy and make ampalaya and shes not putting any other ingredients after nya hiwain nilalagyan nya nang asin tapos babad for 5 minutes and then after that shes putting vinegar, and ajinomoto shes not cooking it. The more bitter the more nutrients you get. Love it. I've read somewhere that not mixing/tossing the ampalaya during cooking time will help lessen the bitter taste. I tried it a couple of times and so far it's been effective. 😜

I love this dish. Most of the time, we add meat like ground pork or prawn/shrimps. We sometimes susbtitute tomatoes with canned sardines (with tomato sauce).

having my mom always have a batch of this at breakfast helped me "pace" myself on my first meal after awakening from sleep. The harsh extreme of taste made me scoop more neutral rice, filling me up and giving my palate a chance to mellow down. I'm sure if I was raised with breakfast sausages and pancake syrup, or fried cheese and bacon with no rice filler between each next bite, I'd have taken in more salt just to feel that satisfaction, this was a neat little health hack I guess she had naturally devised within my fat kid diet routine. I appreciate it much more now in adulthood. Well done food channel reviewing stuff with KZbinr editing polish.

Ako nmn po bago lutuin ung ampalaya ay binababad q muna xa malamig na tubig with sugar.. tapos lagay xa fridge for an hour then drain the ampalaya at igisa xa itlog.. voila super crunchy at Hindi bitter 😁

Parya was, & still, my favorite when growing up. I don't know why I loved it so much. In japanese it's called goya. If you add tofu to this same recipe, it'd be champuru. It's delicious. Thanks for highlighting such an unappreciated veg/fruit.
