I have a “Kiwi” hand cutter that does julienne and scores/ decorates carrots, cucumbers et cetera, and is useful for firm cheese too. Indispensable since I’ve been cooking for one. Mine came from an Oriental grocery (as do many Caribbean ingredients where I live) - cheaper than buying online.

Thank u for these. I make this sauce often but find that using vinegar alone makes it very harsh. I learned from this great Jamaican cook Enid Donaldson to use half vinegar to half water. Use a bit of sugar and a pinch of salt too. Lovely!. I store in the fridge

I don’t think it’s a “sauce” at all. A sauce is a purée or thin condiment. This is more like a Jamaican Coleslaw. I think ill call it that from now on considering i didn’t know it existed till now.

Sometimes I put a small piece of ginger and a small pinch of sugar not to sweeten just to balance. The untrained palette won’t even notice it. You did a great job!

I grow my own and sun dry it very good or you can buy the fresh herb put in a zip lock bag and freeze once frozen remove from freezer and tap the bag hard against your counter most of the fine leaves will fall off fresh thyme especially if you live in cold climate.

This is not a sauce. It’s more like a side dish like Jamaican Coleslaw. I’m glad you guys have your own slaw, but you should recognize it isn’t a sauce. A sauce is a thin purée.

Thanks for watching and commenting. A sauce is any liquid added to food to add flavour, texture and moisture whether thick or thin, cooked or uncooked. Functionally and definitively escovitch is without a doubt a sauce. The vegetables are a plus but if you remove them the function of escovitch still remains

@@feedandteach that’s true sauce is a liquid but this isn’t a liquid unless it’s blended and nobody would remove all of the vegetables because then it wouldn’t taste right. There wouldn’t be enough flavour leaching off of the vegetables to make it a decent sauce because it has to be blended in to impart it. Because of that it isn’t really a sauce.

Why individuals create their own version of Jamaican cooking methods then present it to the world as if this was how made from inception. You make a mockery of traditional Jamaican cooking. Pickles is what Haitian call their thing they used on fry Pork: why you change from Escovitch to Pickles. Who have time to pick out garlic and Primento Seeds. This fry of onions is a new creation and not how this was done for Good Friday to Easter Monday, but you don’t know the traditional of Escovitch you are including Spanish and African in traditional Jamaican item. The Sweet Pepper is a waste in the first. “Acidity” with Pepper helps with Fish. Sour is crazy combination for eating food when did sour taste become a flavor in Jamaican cooking. Me bex
