I like to use rendered Bacon fat from bacon that does not have nitrates. With fish gives you an amazing flavor, but the beauty is the dichotomy the wine adds it dials back a lot of the bacon characteristic, and some of the smoke, and leaves this delicate smokey, bacony hint... with fish is absolutely gorgeous - and if you want to level it up, take a little crispy bacon crumb with capers and garnish 💥

Putting the sauce through the sieve is more done so for plating presentation and aesthetic purposes. It would be fine to do that. I think it would be delicious.

Fish has a very mild flavor so adding to many spices will remove the natural fishy taste. Except for tuna which has a strong taste and looks red

no you can't it is part of the main flavor of this sauce it's like saying can i skip the beef for burger,, the alcohol evaporates anyways you are only left with grape fruit flavors and aromatics, geesh you muslims are too much, fine use chicken stock instead but you don't know what you missing

why is all the beautiful food on television,youtube or on tv talking about expensive restaurants far away.for our generation,food at school in the seventies and eighties ,the food was out of this world and our parents or mothers could cook beautiful food.now all alone in a flat,nearly sixty,we can't get beautiful food anywhere.my local takeaways are dreadful the four supermarkets which i go to,the cafe and freezer food is absolutely dreadful i never ever ever eat like this!

This was a horrible white wine sauce. I don't know how to make it better. I did everything like the recipe called for, but it was just not my cup of tea. The flavor was slightly lemony but I tasted more acidic flavor and the white wine added more of a punch instead of being subtle (I did let the sauce/alcohol mixture simmer off but this wasn't a good sauce). I might just substitute it with chicken stock to see how well it turns out but I was sad that I bought such grocery items only it to be a total failure.

skip the white wine vinegar and lemon juice, idk why she added those for when she was already using wine which is enough, she ruined the flavor doing that

@@ARCSTREAMS I can totally agree. She did ruin the flavor of the sauce. I'm really hesitant about adding wines to sauces and soups/stews since I've never liked the results (either that or I'm just really picky or something). But thanks for the advice. :)

@@myonekawa230 might be the wine you were using was too acidic or dry as well, but try chardonnay or others and def do not add more acidity and balance it with the heavy cream, i love wine sauce but yeah to each there own you welcome

@@myonekawa230 yeah some wines work well others don't, one time i had this over sweet moscato wine and it def did not do well, yesterday i went to get a white wine for making sauces and could not find the one i usually get which is a french white table wine nothing fancy and more made for cooking i would say but instead got this sauvignon blanc from chile it was not bad but a bit light so i had to add more than the usual and let it reduce perhaps i did not reduce it enough as it was still light tasting in my sauce so maybe that one would have been good for your taste but so long as the flavor punches through for me but it was just too much on the lighter side , you welcome and good luck im sure you just need to keep looking to find the right one for you
