Ingredients:
-Measuring cup: 240ml
For the Apple Cupcakes:
1 + 1/2 cup (180g) Flour
1 + 1/2 tsp (6g) Baking powder
1/4 tsp (1g) Salt
180g (about 1 + 1/2 cup) Apples - peeled, cored, and diced
1 Large egg at room temperature
1/2 cup (100g) Sugar
1/4 cup (55g) Vegetable oil (any flavorless vegetable oil like canola, corn, sunflower)
1 Tbsp (15g) Lemon juice (it will prevent the apples from browning)
For the Apple Filling:
1/3 cup (80g) of Water
1 Tbsp (8g) Cornstarch
240g (about 2 cups) Apples - peeled, cored, and diced
1/4 cup (50g) Sugar
2 tsp (10g) Lemon juice
1/4 tsp Cinnamon (optional)
For the Cream Cheese Frosting:
1/2 cup (113g) Unsalted butter at room temperature
1 cup (135g) Powdered sugar
1 tsp (5g) Vanilla
1 + 1/4 cup (280g) Full fat cream cheese at room temperature
For the Caramel Drizzle:
1/4 cup (60g) Cream (30-35% milkfat)
1 Tbsp (14g) Unsalted butter
1/2 cup (100g) Sugar
