My cake is chilling in the fridge waiting for tomorrow to be eaten by my kids and husband..! Even though i baked it in one pan and that was the most challenging part of the cake for me, it worked well despite the fact that i had to trim the bottom and top parts of the cake as they were dry and hard. I'm gonna come back for the tasting result! 😉

That usually happens when you overmix the batter, deflating the whipped eggs. Vinegar is also important for this recipe because it reacts with the leavening agent and helps the cake to rise. A lot of people think vinegar isn't that important and skip this ingredient.

You can use five eggs. Add the sugar right after you start to beat the eggs. Just make sure to beat them on medium speed for about 7-8 minutes until thick and very pale yellow.

Dutch-process cocoa powder gives the cake a deeper red color, but you can use another type of cocoa. You should follow the same steps with buttermilk as if you were using milk. The warm mixture helps to dissolve the cocoa and the food coloring evenly. Just remember to let the mixture cool to room temp before adding to the batter.

I don't recommend using liquid food coloring. The gel is much more concentrated. If you use the liquid one, you'll have to use a large amount of food coloring to reach this deep red color.

Yes, but the other layers won't rise as well as the first one. You can use one tall pan (20cm in diameter / 8cm deep) and cut the cake later. Just make sure to cover the top of the pan with aluminum foil if the cake starts to brown on top, as it will take longer to bake.

Preheat the oven at 350°F (180°) for 5 minutes. Then bake the cake for about 35-40 minutes or until a toothpick or skewer inserted in the center comes out clean (time may vary depending on the oven). Just be careful because when you bake a tall cake, it has more chances to overbake and get dry on the edges while the cake is still raw inside. If the cake looks good on the outside but the center is underbaked, cover the cake with aluminum foil and bake for a few more minutes.
