Love grinding my own wheat. It taste so sweet. Most of the wheat we buy in the store is spoiled. Also you may not have trouble with it now eating bread and it not does not make you gain weight. Fresh ground flour and made bread is very good for you. Unlike store made and brought bread which has so much stuff in it to make it last that you will have stomach problems and will gain allot of weight. Wheat bread is a whole grain so helps fill you up and you have not lost all the vitamins because the whole germ is there. Nor is it bleached stripped of nutrients then put back in. Great for your bowels.

Here is a good recipe for tortillas from New Mexico, 4 Cups flour, 1.5 teaspoons salt, 1.5 teaspoons baking powder, 4 Tablespoons lard or shortening, 1.5 cups warm water. Mix the dry ingredients and cut in the lard. Add the water a bit at a time to form a dough. Knead until smooth and elastic. Cover and let stand 10-15 minutes. Divide into 12 equal pieces. Roll or press into approx. 6 inch circles about 1/8 inch thick. Cook on a hot ungreased griddle or best on a cast iron skillet about 2 minutes each side, until lightly brown. Very yummy.

The Netherlands had a blizzard this Sunday. We are located just below (Belgium) and we just had gentle snowfall here (thank God). But we are snowed in. 4 inches of snow; that's a lot for little old Belgium. Temperatures will be in the negatives (°C) for the rest of the week, so that snow is going nowhere.

Quick tip on the homemade tortilla. I couldn’t make them work and still am not great, but, put the slow cooker on low and line with a slightly damp paper towel. Store them in here whilst you do the batches and it stops them going hard, pop a slightly damp one on top too.

So if you grab a grocery plastic bag , cut it into circles and use it to press down the tortillas instead of the ziplock bag. The ziplock bags are thicker so the dough sticks more for some reason so the grocery bag is much easier and doesn’t stick to the paper as much.
@brookiebakerie
@brookiebakerie 3 жыл бұрын
You should have an extender that came with your NutriMill. It attaches to the top and the lid sits on it. It makes it so you can add more wheat berries in at once and not have to babysit it to keep adding more. Also, hard wheat is perfect for baked goods that require yeast. If you're making things that use baking soda or baking powder to rise, they will be lighter and fluffier if you use soft white wheat. You can use hard wheat for everything if you want, but you don't want to try soft wheat for yeast products. They will fall. I hope that's useful info. 🙂

Something to try for the tortillas if you want them thinner, start them on the tortilla press then use something small like a 10 inch piece of a broom handle to roll them flatter, and start from the outside, roll flatter then lift and turn and roll again. Continue that until it’s all as flat as you want it. Another way to learn is one of you kids work at costa vida where they make tortillas from scratch. :-)

Whole wheat bread from the store often has caramel coloring in it to make it more brown. Also, the type if wheat you use will change the color a bit. Hard red wheat has a different color than the soft or hard white wheat. Also, homemade whole wheat bread has less carbs than store bought whole wheat bread. There is one brand that I like. It is called Aspen Mills. One more thing. If you have a WinCo close to you, which I think you should, then go there to buy wheat in bulk. They have the best bulk section for the best prices. You can just buy the huge bags of wheat berries right off the shelf along with many, many other huge bags of things.

Sarah, I really miss the energy of my large family of 14. Jan 2020 we departed our home in MD to spend the winter in Florida and Louisiana. Then COVID descended upon our world. We got stranded in southern Louisiana for nearly four months. In the meantime, our doctor advised us no to return to our home of 40 years with our 10 grandkids because we could become infected. Si we are involuntary nomads and living in our rv fulltime. We hope to return home in June once we get our vaccines. Stay safe!

I used to use a recipe but now just free hand it for tortillas. The key is using boiling water and a bit more oil. You want as wet a dough as possible while still being able to roll it out. Flour salt boiling water and olive oil:) I like to make a paste and then slowly add more flour. Makes it easier to mix to begin with as well with the hot water:) takes time but you get the feel for it and it’s yummy:) my 6,7,9 year olds make them all the time and they turn out great:)

The best way to cook the shrimp is to put butter in a frying pan, let it melt and add garlic or garlic salt...add the shrimp laid out in single ones in the pan and let cook.
