Disney parks has been at this for YEARS. Although they do the typical scent stuff like making it smell like cookies outside their bakery to get you in the snacking mood, they go well beyond that. Every major area of the park has its own scent, several major rides have distinct scents to make the experience more memorable, the major disney resorts have their own scents (in my personal experience the polynesian scent is like aromatherapy, like you just feel a wave of relaxation hit you every time you walk in the lobby)

So I’ve worked at Panera bread recently, and I can tell you the bakers work the night shift so they can actually make the bread in a timely manner. The bread that you smell throughout the day is that same bread just reheated when they need it.

I used to work in the "food avenue" section of Target, where they had me make popcorn every 30 minutes whether it was selling or not. They told us it was because popcorn was super cheap in waste, but the smell made the customers hungrier when they were grocery shopping. I think it's fine to waft out smells if it's from what you're actually making, even if a bit heightened. However, it becomes disingenuous once you start using smells that aren't from your product. It's similar to using CGI in a food commercial, something which is explicitly against the law. You're presenting and something that isn't your product as what you're trying to sell.

That being said, in his analogy of using sony who tend to spray scents i dont really find that to be an issue. I mean its not like im going to equate oranges to a PS5, and thats such a legal toilet, because where do you stop, they would essentially have to ban using any sort of air freshener in commercial envoirnments for fear it could "trick humans into buying something" though i do agree that if you sell food as a product brand name IE dunkin or starbucks the smell should be on brand for your products available... Also those smells shouldnt be allowed outside of your stores zone. I am referring to the dunkin using scents on transport systems in Seoul, i get that its obvious that its a fake smell but at least for me i would find it extremely intrusive. It would be like if a mcdonalds employee stood at your front door constantly ringing the door bell with a big mac in their hand, at least thats how i see it since unlike with sight where i can simply ignore a billboard or sound where i can mute the TV or Radio i cannot just ignore the smell at least with out plugging my nose.

I actually got sick once when i was a kid, while i was at a perfume store with my mother. I was extremely overstimulated from the perfumes that i threw up. Partially lucky that we were at the cash register when it happened, because when the cashier lady saw i was trying to hold it in, she grabbed a little trash can from behind the table and handed it to me. I think my mom was embarrased that happened, but there really shouldn’t be anything else to do in that situation, other than check if your child is alright and leave as soon as you can so that doesn’t happen again, because this sickness was caused by the enviroment. The problem was, my mother only did half of that, she checked with me if i was ok, then proceeded to banter with the clerk lady, as if none of that happened. I come to find out later in life that my mom just doesn’t read the room well and may just be the only person that can actually worry too little in a serious situation. But still, if your child says they’re feeling sick and actually throws up, you should still check on them, becuase they could still be sick. And unfortunately, i was still in the area that made me sick, and she was taking such a long time, i actually started to feel sick again and just said screw it and waited outside, which at such a young age, it was my first time i purposly split from my mother in a public area. Lot of bad thing could’ve happened, and not one cross my mother’s mind. That is actually the second thing i learned about my mother, when my mother has something on her mind, nothing else takes over until she’s finished or it’s something that needs her full attention. As long as she actually sees it. Worse part is, she didn’t even aknowledge it for the rest of the day. It literally took until the next day ror her to bring it up. When i had pretty much forgotten about it. Which is the third thing about my mother, she claims to be so busy, she has some check list of things to do in her head that she does in order of which one came to her first. That’s at least what i think happens. I really don’t want to want to just dogpile on my mother, she is an actual good person, she just can be a bit thick-headed at times, but her heart’s still in the right place, though she can turn into the personification of a ‘karen’ when she doesn’t get her way at restaurants. (Well, except the asking for the manager part, she moreso just just really snarky and a bit bitchy when it happens, but mostly the same, really.) I apologize about for the ranting, i suppose i just had some issues of my past i needed to get out.

You know, I do have a question to add to this. So with covid causing us to mask up when outside, I noticed a benefit recently where the mask can either hinder or eliminate smells (benefit to me because I can be sensitive to them). I mainly noticed this when someone who didn't wear a mask as often mentioned how some people we both interacted with that day clearly smelled alcoholic, while I never caught any scent. From there I did start noticing how face masks seemed to block scents (although not always getting rid of them 100%). So, with how long customers had to comply with mask mandates when entering businesses, could we find a decline in the aroma method's effectiveness in areas that required face masks?

I work for an auntie Anna's, I've seen this constantly. Every other customer comments about the smell. Another thing I notice is that when it's not busy, small spikes in activity will happen if a customer holds the door open for an extended period of time (outdoor mall), allowing the smell to escape and draw people in. We also don't use hoods, but I guarantee there's something in the food that heightens it's smell, cause something as basic as our almond granola (which otherwise would have no smell) mix has an insanely potent scent.

Even though I am a bundle of food allergies, I’m not really worried about artificial flavors. They often are molecularly identical to what we eat in our food or extremely close to it, so our bodies are likely to know how to handle it. The natural flavor is typically more complex and so does taste different, being a combination of flavor-related chemicals rather than just one of the ingredients. Vanillin, for example, although considered an artificial flavoring when it is synthesized by the manufacturer rather than extracted from the vanilla bean, is the major ingredient in the natural product vanilla (which has other minor ingredients contributing to the taste). I do think there should be more caution concerning artificial colorings, since they can be radically different from what our bodies evolved on. The Popsicle brand of popsicles introduced a line called Simply Popsicle which used very simple ingredients (also cane sugar instead of corn syrup - and yes. I can tell the difference and cane sugar is much tastier), including natural colors and flavorings from real foods. It really made a great difference - grape tasted like grape, orange like orange, etc. because the flavors really were from the fruits and there was no interference from non-food colors. Can’t find that line locally so maybe they discontinued it, but I found that their Paw Patrol-endorsed popsicles are actually the same things. Thanks, Paw Patrol! But the full line had more variety. There are other popsicle brands that use only the real fruit or natural flavors and colors, and the difference between those and the usual stuff is undeniable. But it’s nice to see that happening to such a ubiquitous brand as Popsicle.

I don't know if it's true, but while working at the Gap in the 90s, I was told that the store was maintained at a positive air pressure. This was to push the scent of the clothes (fabrics and dyes-Gap scent?!) out into the mall so as to induce shoppers to come in. There actually was a breeze flowing through the Gap's mall entrance that was not detectable at other clothes stores. True or not, of all the clothes stores in the mall, only the Gap could be smelled from a distance. Even years later I could pick up on the scent of a Gap from afar as I strolled a mall.

The funny thing about the vents is they actually help with the smell situation, too, while also channeling the grease particles from fryers and such which really mess up ceilings and walls. Ever notice you can smell french fries within a mile of a McDonalds or donuts within blocks of a bakery? It's because the smell is piping out those vents. The ventless method would of course increase the smell inside the store and probably outside the front door, but it's a trade off. In a mall or airport situation, though, you'd definitely want the smell indoors.

It's nearly impossible to have a histamine reaction to these sorts of things. They can dilute them into quantities as small as parts per trillion. Also, it's basically impossible to be allergic to a scent compound since they aren't proteins. The worst they can do is have minor interactions with existing proteins and you might get mild allergy like symptoms like watery eyes or a mild headache. There's no documented cases of anyone ever suffering anaphylaxis to a scent in the wild. It's always accompanied by some sort of protein allergen.

I am sensitive to scents so I stay away from candle aisles at stores and hold my breath during Christmas time when cinnamon is everywhere. I’m allergic to cinnamon and can get a headache from such a strong smell, but that is different than these scent dispensers, I suppose. I do have friends, though, that are even more sensitive than I am and get runny noses and headaches from walking into a store with any artificial or floral scent. You bring up an interesting point and it makes me curious if they are affected by these sorts of artificial scents, too.

Escape rooms do this too with sprays to simulate certain scents. A few examples at my location would be "Hospital" scent for a laboratory themed room, "Mildew" for a prison themed room, and a combo of old spice and whisky scented spray for a 1920's themed escape room

I noticed this in Ikea's candle section. there's a really nice smell in the area, but upon inspection of the candles none of them had that same smell. maybe it's just all of them together but it could very well be manufacturered.

Disney uses these strategies on Main Street. They also had special smells for their hotels that I saw they were selling at one point. This included hand sanitizer or something that sprays the hotel smell in your own home. They even had those stick things that have a sent on them (idk what they are called). But they smelled just like the hotels and made me want to stay in that hotel. I've also seen strategical food placement where Disney places their popcorn stands at the entrance so you buy the popcorn and walk into the show. I can go on and on about Disney lol but you should look into what they are doing maybe it's interesting and there might be more to it.
