Masala means to me almost curry or spice blend like curry. In my midwest world I only ever heard curry... but after seeking, learning and searching for Indian dishes on the internet I've heard about masala. I love Indian food. One of my favorite.

Looks like my kind of dish,love Indian flavors,and rice.I have Hing,it took me a while to find it as I shop in Bangladeshi supermarkets,and they don’t use it,I asked them for it,but the guys didn’t know what I was looking for, finely I found it myself,they have so many packages,jars,and boxes it wasn’t easy for my eye to locate it.

Thanks for the recipe. Deep products sells frozen fresh grated coconut which is very convenient. It is frozen in a thin slab so you can just break off a piece while still frozen. It is easily available here in Canada even in some of the mainstream grocery stores. It is many years since I have bought a fresh coconut and grated it at home.

Often times Maharashtrians make masale bhat for auspicious occasions like a festival when there’s a puja performed. On those occasions adding onions and garlic to any of the food that day is avoided. Also, dessicated coconut may be substituted for fresh. Thank you for sharing!

I refrigerate for one day any leftover vegetable or fruit... after that I put it in the freezer and date it so I know when to use it up or when to toss it after months. Usually a year or six months. It's a wonderful way to not waste food and have a variety of possibilities and flavors available for stews and soups. You can freeze almost anything. Cilantro, parsley, chives, garlic, onion, tomato, meat, rice, noodles... anything basically.

I let out a small groan every single time an ingredient gets into the pan - a big groan when I see ghee is added and I am making this TONIGHT! I was thinking of substituting the coconut flesh with coconut milk but then I thought the dish called for nutty instead of creamy flavour of coconut. So I supposed kerisik (Malaysian here) would much a much closer substitute. Kerisik is pre-toasted grated coconut readily available at the supermarket.

I tried this recipe in a thin bottom pan. I got nicely charred dark brown rice in the bottom. It has burnt smell, not nice. I guess trick is to use cast iron pan.

Lovely! Spectacular! Use cauliflower rice instead if blood blood sugar is an issue. Use broccoli or squash w potato instead of cauliflower. And no seed oils! Look up why to avoid those.

When using potato please remove the little growth on the potato. Also did not mention washing the cauliflower and potato. Otherwise the recipe is interesting.
