I grew up speaking Italian in a very Italian household, making homemade pasta from the time I can remember, Everything you did was just perfect! And I can’t wait to try your way. Pasta can also be made with eggs and flour. It’s a little more tender that way, but we often preferred The flour and water method - pasta got a little more bite to it, so good! Polish people mske home made noidles for chicken soup. You add eggs for liquid along with water. Roll in a rope and take a knife dnd start cutting on an angle back and forth criss cross like. Let rest snd dry a bit and then add to boiling water to cook a bit. They were my favorite growing up. We always helped Mom make.

I have never ever heard of this flour, I have made noodles but we made with regular flour and egg yolks. It makes wonderful pasta but it’s an all day job. Bet this was delicious 🤤 🙏🏼

When I make pasta I use 00 flour but I dust it with semolina. If you are not hanging long shapes to dry make a nest with them and dry them on a sheet pan. Freshly formed pasta should sit out to dry about 30 minutes. Drop it in boiling water until cooked to your liking. Do not pour the water out when done. Lift pasta out with a spider or slotted spoon. If you were to pour it out the semolina you dusted with would end up on the pasta. Semolina drops to the bottom of the pot and you dont want that on your pasta. If freezing for later you can let it sit out for a couple of hours and put in the freezer still on the tray. When it's hardened store in the freezer in rigid containers not freezer bags.

Bring back memory of making cavatelli when I was little My little pinkie hurt.I think I only did it once.Before my mothers arthritis got bad I remember Sunday's with ravioli under dishtowels so they wouldn't dry out before we got back from church and of course the smell of gravy (tomato sauce) as most call it😅

Hello there, I’m curious would it hurt to season the pasta dough with salt or garlic powder as it’s initially being mixed? I’ve never seen semolina flour it look’s heavier than all purpose. The semolina looks more like granules. Like a fine cornmeal. Is that the case?

My mother had a small but incredibly heavy pasta maker. Now I think it was a sheeter with wooden rods. How to make pasta with that? Now I see! Later Ron Popeil had a pasta maker that made more sense. [Remember Pocket Fisherman, Rotisserie, etc. ?] Do you dry those creations before cooking? Need to know! Another retail food panic and "What to do, what to do?" Yes, people did make their own foods way back, including butter. With our current technology and retail sales most don't have a clue. Good to know.

Cooking for your family is very different than commercial cooking where gloves are required but you can still wear your wedding rings (others are not permitted) but the boiling/baking/cooking process will kill any germs
