This is a lovely recipe. I had to increase the oven temp to 450 because my loaves were not browning at the temp indicated and they had to bake longer than the recommended 14 minutes. Most baguette recipes call for oven temp 450-475 and baking time of at least 30 minutes and this worked for this recipe.

I just completed my first batch. My dough didnt rise and wasnt smooth and soft like yours was after 15 mins of kneading and tuck and rolling... It was pretty heavy/lumpy and heavy when i was done kneeding it. So I left it overnight to sit..... covered. When i woke, It didn't "rise" like yours. Again not airy. But it was the first time, so i powered on, instead of binning it in the garbage. I cut my dough it into 3, kneeded, rolled, sprayed and floured, and baked with the convection on, at 425 F for 23 minutes. I put the pyrex boiling water inside the oven, and again also sprayed water prior to putting in. When i removed it, i was very pleased.... I successfully got the color and crispness which i read others had challenges with.. That said, the dough in the middle of the baguette was thicker, and not airy. I suspect that either my dough is sub-par, or the yeast was inadequate some way? The water was warm when i added the yeast so it didnt muck it up at that point....likely a combination of the two, as I cant see it being anything else (the salt). That said, the crust with butter and jam was excellent. Will do next round with "fast rising" yeast and another type of flour. Thank you very much

You should definitely use bread flour. High protein flour. I also threw away a lot of bread in the early days of my career. But you learn over time. Congratulations. I believe you will make wonderful bread.

It is not right to give time. How the dough rises depends on the ambient temperature and the season. However, at room temperature 22-25°C, it takes approximately 30-40 minutes.

I made this for the first time. It was so easy and terrific. Thank you. My question is, why do you think my bread was not as brown as yours? Mine had color, but mine was more pale. Because it was still pale after ~14 minutes, I continued to cook it for 5 minutes longer, then increased the heat by 5 degrees and cooked it for a few more minutes. Still, my end result was not nearly as brown as yours. Should I add a little diastatic malt?

No, I do not cook with a fan, because many people do not have a fan oven. If you are going to bake with a fan, turn the part where you cut the dough towards the fan. The fan will lift that cut further into the wind.

Can you explain what you mean by " baking with steam" ? Did you place a large tray of water under the bread?

Unless it's a special recipe, all bread should be steamed. Place a bowl of boiling water on the bottom of the oven to generate steam. At the same time, spray water on the dough.

El método de cocción de cada horno es diferente. Así que haga un seguimiento después de 12 minutos. Retira el pan cuando alcance la consistencia que te guste. Todos los panes (a menos que exista una situación especial) se hornean a altas temperaturas. Entre 220-230 en un entorno doméstico. Generalmente prefiero esta temperatura.

My recipe almost identical but never any heavy kneading...just 1hr rest in bowl then fold in bowl 4 times, then same 3 more times at 30min intervals...shape and rest 30mins .....never had a failure

Si cada horno es diferente ,pero logicamente todo horno de panaderia osea profesional es otra historia muy diferente ,estos manejan un gran calor y el pan se cose mejor,que un horno de casa de estufa nunca es igual el tiempo de coccion claro esta .

Die ideale Raumtemperatur für den Teig liegt zwischen 20 und 25 °C. In dieser Umgebung verdoppelt sich die Teiggröße in 45-60 Minuten.

Leider hat mein Teig bei 25Grad Raumtemperatur 3h gebraucht um aufzugehen und auch im Ofen sind sie nicht wirklich aufgegangen 😔 ich muss irgendwas falsch gemacht haben. Mein Teig war von Anfang auch sehr fest. Hätte ich mehr Wasser nehmen sollen? Ich hatte Mehl Typ 550.

10 g de sel, c'est un peu trop. La norme en France était de 18 g / kg de farine. Aujourd'hui la tendance est plutôt à 16 g de sel/ kg. La levure sèche, 5 g sont suffisants. Il est important d'utiliser de l'eau qui sort du frigo et si possible de la farine type T65. Merci pour la publication.

This depends on the temperature of the environment where the dough is located. The dough is left to ferment at 22-25 °C. In hot summer months, it doubles in size on the table in 1 hour. If the environment is cold in winter, preheat the oven to 50 °C for 15 seconds, then leave the dough in the oven. 1- It doubles in 1.5 hours.
