The poisonous pufferfish Fugu is a delicacy in Japan. The poison in Fugu is Tetrodotoxin, which is 1000 times more potent than cyanide and there is no antidote.

To sell and buy this fish, you need a license. Rikizo Okamoto, owner of the Fugu restaurant "Uosei" in Tokio, is looking for Tora-Fugu (Tiger pufferfish), a toxic wild Fugu, as fresh as possible. Proper preparation is critical. The skin and the entrails are poisonous and they must not contaminate the non-toxical meat on the muscles.

The only thing I can think of, is that a long long time ago... some person poisoned a whole lot of people in trial and error, until they figured out how to properly prepare toxic free Fugu. So it's safe to assume the first Fugu chef was a serial killer.

but a big mac isn't really harmful to you if you exercise regularly and don't overeat it a poisonous fish on the other hand, will kill you if not properly prepared no matter what

Oh I know. In fact the person who holds the Guinness record for most Big Macs eaten ever (He eats like 3 Big Macs a day) is actually quite skinny. And many people have proven that they can eat plenty of fast food, but with regular exercise (as well as eating proper food) they can remain in shape. But my comment was meant more to be an ironic observation of how most Americans look at anything foreign :)

that's just human nature. We wanna eat things that hurt and confuse us. Someone looked at rotting grapes and went... yep, i like how those make me feel dizzy. Caffeine makes your heart beat fast? Lets roast those beans and boil those leaves and make it the biggest thing since beer. Why does this chili hurt my mouth? Hey, I got an idea- let's selectively breed them to make em hurt MORE. Hell, we aren't even meant to process lactose past our younger years- some people just had a lotta cheese and got used to a lot a shittin and now a good portion of the population has increase their lactase production prime years. This isn't even to say of the foods you have to prepare a certain way or only eat a part of to avoid it poisoning you- cashews, rhubarb, lima beans elderberries, asparagus... even tomato plants can poison you. humans will eat ANYTHING.

Our business partner treated us fugu when we went to Oita two years ago. There is nothing poisonous as long as you don't include the poison glands in your dishes. The sashimi was amazing and my favorite part of the entire meal. The Japanese loved that fried puffer fish liver thing, which did give me some numbness on my tongue. I didn't particularly like it, but it was also tasty. The hot pot was great, the meat was like chicken. Oh, and if you ever want to try the liver thing, it is apparently only trustworthy if you eat it in restaurants in Oita, where the locals knew how to cook it without getting you poisoned. Do not try the liver thing outside of Oita.

Thank you for the information. I heard that the fish's ovaries are fermented with rice-bran in Ishikawa Prefecture for several years, about 4-7 years, to make it edible.

It's worth noting, the "poison glands" are all the organs. Fugu pufferfish do not make their own poison, they accumulate it from their diet, so it ends up in everything except their muscle tissue. This is partly why fugu poisoning cases vary in severity a lot, not every puffer has had the same diet. Also, you mean the ovaries. Three years of fermentation gets almost all of the poison out, and only certain parts of the Ishikawa prefecture are allowed to prepare it. The ovaries are tested for poison content before they're allowed to be sold. Liver seems to be banned entirely, as there is no safe means of preparation. Doesn't stop some people from ordering it anyway, with fairly predictable results. It's worth noting about half the actual poisonings from fugu are from the liver and ovaries each. The remainder is from the skin. I can't speak as to what proportion of the ovary poisonings are from the fermented Ishikawa dish, and what proportion are just some idiot cooking and eating them, though if the testing is as stringent as I've read it should be entirely the latter.

From what I've heard, the chef has to take a bite of each fish once done with cutting and serving in order to prove they've sliced the fish correctly and that it's harmless to eat for the guests, since it's your life that lie in their hands. Not sure if this is true, but I hope it is for me to not worrying of wanting to eat this later in my life.

I like to think that's just a chef who really liked fugu suggesting it as an excuse for a free taster on every shift, aha. That being said, it wouldn't surprise me if it's tradition, but it's also not uncommon for chefs to taste food before serving, in this case maybe a double check that it doesn't numb their tongue, so hasn't been contaminated by anything toxic

I mean its not like that one species of puffer fish comes from only the water around Japan. Oh, it dose. And the water has had a nuclear reactor waste water seeping in to it since the tsunami hit the power plant. So in short, cant sell fugu that is also radioactive. And wild fugu has to deal with contaminated water in there environment now.

@@vicegt yeah but that's just for fukushima. the way the narrator grouped earthquakes, tsunamis and nuclear disaster sounds like it's to offer insight into how tenacious the Japanese are for eating fugu. Sure, if my house got destroyed by a tsunami I wouldn't exactly eat fugu the next week and it's still a minority of the population that's affected by them. It's a vague, dumb and generic documentary narration that deserves criticism, or the narrator should have just talked about fukushima only. You must have known this when you realized you only responded to nuclear disasters in your reply.

Tetrodotoxin is a sodium channel blocker. It inhibits the firing of action potentials in neurons by binding to the voltage-gated sodium channels in nerve cell membranes and blocking the passage of sodium ions (responsible for the rising phase of an action potential) into the neuron.

Fugu needs to be prepared perfectly. I'm a straight A culinary student from the University of Chicago & I believe that if there's one small mistake, you're screwed. Personally, I wouldn't prepare it. Much less, eat it. But there's always new experiences.

How good could that possibly be? I live in Hawaii and eat some local sushi which probably isn't up to the Tokyo standard s but is still very delicious to me. I eat pokė which is raw fish mixed with seasoning and little diced veggies, so I get how raw seafood is amazing..... I wonder how much better that raw seafood is than others?

I told my father about how these guys have to train for a long time to dispatch puffer fish. He was surprised because my grandfather used to catch them and cook them up often. You only have to make sure the digestive tract wasn't punctured.

I would never risk my life by any standard, to eat this delicacy. However, I can see that these people do a very good job to make sure nobody gets put 6 foot under.

Don't be such a wuss. As it is you only live once so make the best of it and try this delicious dish. Plus if it's being handled by professional chefs you'll have nothing to worry about since they have the proper training and experience to safely prepare the dish. It's only if it's being prepared by an unexperienced chef (i.e at home) that will result in the consumer's demise.

I heard that fish is to die for. It’s that damn good. I love fish! I can see myself trying to eat it for the first time. I’m holding on a slice of fugu with a chop stick. Sweating 😥 like a pig still on that one slice. Shaking and my heart is raising. Life is flashing before my 👀.

I knew the Japanese ate puffer fish, But I didn’t expect the sheer amount of demand for pufferfish there. I thought it was like a rare thing that you may find on a menu from time to time. Not entire restaurants, full markets of them

I would appreciate to taste Fugu - it looks sooooo delicious. I would only eat it at an authentic Japanese restaurant though. I love Japanese people - gorgeous, classy, intelligent and very creative in their food preps. I'm going to Japan soon and will try Fugu.
