Love this video, i actually tried making this last year and used frozen potato cubes as well. I added instant potato flakes that had sour cream/chive to get that flavor it in but it didn't bind as well because i added too much of the instant potato. One thought was using buttermilk powder to get that sour cream flavor in the sausage. Keep up the creativity on these sausages.

I'd start cheap, see if you really like it. I bought a cheap $70 grinder at Harbor Freight (or similar type store, HF doesn't always keep them in stock) and it does the job pretty easily with small batches. I've run a few grinds through it with no issue and now I'm looking for bigger better. But that cheapy was definitely an upgrade on my Kitchen Aid attachment and well worth the $70 it cost.

I stopped in a meat market in McPherson, Ks. and they had a Swedish Potato sausage that I bought as a "curious what that will taste like" whim. I got home and cooked it and it was amazing but then I deep fried a couple and they were out of this world. I would love to see you do a "copycat" of it so I can make it at home. So far I've made 12 of your sausage recipes and this weekend will be 13 thanks for the inspiration and instructions.

Looks great! Ever since it’s been difficult to get a hot jalapeno, I’ve switched to serranos. I do like Serrano flavor, and really miss jalapeno flavor, but that lack of heat is all the difference

Theres a large asian market that I frequent. I get something weird to try every time i go. I've had this thought about a squid ink sausage stuffed into a squid tube. Maybe the ink and tentacles mixed with some pork.

We have made similar but with smoked paprika, rehydrated garlic granules and diced guindilla peppers, I use french fries that i have deep fried first, then cubed and back in the freeze to firm the up. It is my half arsed attempt to copy a sausage that we had in spain at a tapas place near our hotel in Seville, the pre-fried french fries are because that is what they looked to have used. I'll give your recipe a try first as it does look good, but then i will go off piste and add high temp cheese and bacon to my paprika sausage, could be blah, it could be good, so i'll just use afew pound from an regular batch to try. Have you ever thought of adding smoked brisket or pork shoulder to your sausages or burgers? Thanks for the recipe, Take care, God bless one and all.

Potato starch is great, they use it in the Netherlands from what I've seen instead of wheat starch (traditional) so gluten free people don't have to worry. PS I tried to make a bacon cheeseburger sausage a few months ago and it just tasted like beef sausage... I did use 10% bacon (before frying) and 10% cheese and even replaced the water with pickle juice, but I hardly tasted any of it. Maybe the beef flavor was too overpowering... It was also a little dry. Jalapeno Gouda 50/50 beef/pork turned out best I ever had, so maybe I'll just put a little pork (fat) in anything going forward. A "beef sausage" could be 75/25 beef/pork or something like that. That's my next experiment after I get the garden going.
