my husband and I just recently went raw together and couldn't wait to try this recipe, I didn't have a spiralizer so I just used a peeler and made fat wide noodles that way. I used a little more garlic and for my husband he sprinkled his with olives, and some olive oil because he requires more fat in his diet than I do. It was sooo good, thank you Kristina.

I'm obsessed with this recipe! Have it at least 2 times a week! It's good to add lemon juice in the sauce. Also, if I'm running low on pine nuts (they are expensive!) I add some cashews in with the pines. Cherry tomatoes and green onions to top it of makes the dish perfect. Thanks for posting! Yum!

This was the first recipe I did 12/29/13 before transitioning to raw this year. I remember doing it in my kitchen watching my monitor and following you along. It was so awesome and first raw pasta but I couldn't even finish now look at me I eat 2 lbs salads no problem. Amazing probably about 200 days raw total this year! I need to get a kitchen setup like you for videos. I had a detox party at video studio coming up maybe I'll get hooked with em and go pro up here in OK. Tried this tonight with my family and we ALL loved it!! We added a bit too much lemon juice [it is easy to get carried away]. We have previously tried avocado sauces, but this sat so much better on our tummies and we feel amazing afterwards! SO much less fat and so much better for us. MMMM

Thank you Kristina! I can't eat raw in the winter because I live in Van., BC and my digestive system doesn't like raw veggies and tropical fruit. But when the sun is out, I have enjoyed (and shared with friends) lots of your different juices, raw zucchini noodles with lots of different sauces. I love your energy - you're an inspiration! I've recently begun watching your videos again after a long stretch of bad food decisions. I'm an omnivore and a devout cheese and grain lover, and I really doubt I will completely leave those loves behind forever, but I really need to reign in my diet. I'd like to incorporate a lot more raw and cooked vegan dishes (that aren't trying to be meat :p) in my meal plans so I truly appreciate your videos! They're delicious, light, and simple. I cook all of our meals from scratch, so sometimes these raw meals can be blessedly easier in comparison. Thanks for doing what you do! Haha I'm almost embarrassed to tell you but it was the "as seen on tv" version. I think it was called a veggtie? But it was in my price range at the time, it does not have suction cups on the legs like the nice ones but it's great for just me. I live alone and am only preparing meals for one. It took me a couple mins to figure out how to make it work best. Crank it with your right hand and hold the green handle with your left and slowly pull it towards the blade with the left hand/green handle while cranking with the right. Works great for me, I will deff invest in a higher end one when it eventually breaks but I wanted a cheaper one to try out first to see if I liked the idea. Goodluck! Hope that helped

You are so wrong about oils being good for you. Refined oil is empty calories and is just pure fat.When you extract oil from nuts and seeds we create imbalances with the body the inevitably produce unintended health problems...this is right out of the book 80-10-10.

I tried a version of this - I made flat "noodles" since I didn't have the spiralizer, and made the sauce with cashews instead of pine nuts. I added some minced raw kale and cherry tomatoes. Unbelievable. So creamy and good. I can't wait to try it with the "big fat" noodles. Thanks for a great recipe.

I have no problems with this dish EXCEPT for you using the name Fettuccine Alfredo. This is NOT that dish in any way, shape, form or taste. How would you like me to call a t-bone steak a "raw salad" because I served it rare and "substituted" meat for the vegetables. Makes just as much sense.

CookinginRussia I agree completely. This is one of the things that annoys me about some vegans. Vegans need to stop calling things something they are not. Sorry but dishes that contain animal products as a key ingredient can't be vegan. Dishes that contain cooked items as a key ingredient can't be raw. So there is no such thing as raw vegan fettuccine Alfredo. But I guess fettuccini alfredo sounds more appetizing that zucchini with zucchini dressing. If you really want to do a "raw salad" do some sashimi. Just process the fish in a way that makes it look like vegetables and you are all set. FYI Kristina: there are no such things as raw pies or cakes. Pies and cakes are baked goods!

purplemutantas The purpose of calling something a vegan or raw cake or in this case, raw fettuccine alfredo is to show that it is an vegan or raw alternative to that product. It can have familiar taste, texture, or appearance to that product. As for the T-bone steak reference i don't see it to be a problem if someone used vegan meat and fashioned it into the appearance of a T-bone steak. Again, its just trying to show that it is the vegan version of a steak. Many vegans before becoming vegan liked non vegan dishes and may desire those flavors, just with healthier,cruelty free ingredients. Honestly i feel that people who think this is a problem are just looking for another reason to give vegans a hard time or another reason to dislike them. My mom gave me a hard time because i made vegan mac and cheese and said that thats not cheese so you cant call it that!! She admitted it looked and tasted just like cheese.... wth are you supposed to call it them!? If i called it elbow noodles with nutritional yeast and cashew creme or daiya elbow noodles when someone eats it they will be like, this tastes like mac & cheese! So might as well just call it vegan mac & cheese because it tastes and looks like regular mac and cheese! You are already labeling it as vegan so its not like you are trying to fool anyone.

I've looked at this video several times to get inspired and this evening I finally made it! I didn't have a spiralizer, so I used a julienne slicer instead. The "pasta" got a bit thinner, but the taste was the same and it was so good! I didn't know when to add the lemon, cause I never saw Kristina do that, but I had some both on the zucchini and in the sauce. I also added a little bit of salt and pepper, since I'm still new to raw vegan food. With the cherrys.. Mm, really, really delicious!!! :D

you are right but high heat literally zaps all the nutrients so it's almost like you consuming nothing...eating to be full not getting the nutritional benefits. After cooking your meals you literally only get 10% of the nutrition as suppose to not cooking it.

You may be right but… …I've got the exact item & no where on the box does it say 'Spiralizer'. Maybe WS repackaged it to charge more? Next time I'm downtown I'll check out their brick & mortar to get a better look!

Have either of you tried it? How do you know it doesn't taste similar to Alfredo!! You realize she hasn't been fully raw all her life. How do you know she hasn't eaten the traditional alfredo sauce!

Mikaila Jane It's actually DELICIOUS! I made it for a dinner party, with a bunch of meat eaters in attendance - they were going crazy for this stuff! I've been incorporating raw recipes in my diet for 2 years now, and some of the recipes I look at and think "HOW is this going to taste good"? And it ALWAYS does! Try it, really!

I usually like the creativity of raw food and actually am convinced by the benefits of the lifestyle, so this is not meant out of spite or closed mindedness towards raw foodism.....however, i think it's stretching the imagination a bit too far to call this blended cauliflower 'cheese'...i'm sure the dish is great, but who are we trying to kid here?

not this exact recipe no, i can't say I have actually so probably should have reserved the comment until after I'd tried it. However, that being said I have tried numerous very similar recipes to this, the main difference being there was a lot more fat (either coconut oil or nuts usually) and they tasted nom but still not like cheese....and cheese is super high in fat, so I don't see how removing the fat would make it taste MORE like cheese.

You can get one at QVC and make payments for it. After your first payment, they send it to you. I got mine last summer and paid it off in a few payments. I love it.
