A very easy and tasty way to add more color to your meals. Danish Christmas Cabbage is a side dish I've learned to love and eat all year round.
Danish Christmas Cabbage:
1 head purple cabbage
2 cups vinegar
2 cups water
1 T. pepper
1 T. salt
1/2 cup sugar
1 T. berry jam
The three salts I use regularly are:

If you are new to my channel and Fy Nyth in general, welcome and congratulations on joining the Fy Nyth Flock! I'm Ariel. I live off grid (as in no physical connection to public utilities) in a tiny house on wheels in the mountains of western Wyoming. I've been living this lifestyle for more than three years now and love it! What will you find if you follow my channel and watch my videos?
Real life here. I try to show the good and the bad. The ups and the downs. What works, and what doesn't. The parts I love (most of it!), and the things that suck. Not just the showroom version of a tiny house, but everyday life in a tiny house. Not just the romantic idea of "homesteading" or off grid life, but the everyday details of this lifestyle. I split my own wood for heat, carry my water by hand, and attempt to grow as much of my own food as I can between the weather and wildlife here. I hope to help others learn from my mistakes and make life just a little easier for anyone else interested in pursuing a similar lifestyle.
I live in a somewhat harsh and cold climate, but enjoy the stunning sceanery and wildlife that I am surrounded by on a daily basis. For a bit of my background, as a child, I was fortunate enough to be able to spend much of my free time exploring and playing in the woods. Little has changed now that I'm older I suppose. I moved to a place with a bigger woods and still enjoy spending my time outside gardening, hiking, exploring, and photographing the natural world around me. As the eldest of seven children who grew up in a homeschooling family, I had the opportunity, not always appreciated at the time, to learn to do quite a bit of work. I've enjoyed a wide range of jobs, everything from greenhouses and flower arranging to wilderness therapy with teens, to milking cows. Mostly, I enjoy doing the kinds of things that I think provide a real service or value to others. Some of my other hobbies include backpacking, hosting people, cooking, preserving food, anything to do with nutrition, reading, journalling, and sitting around a fire and talking to my close friends.

Greetings from Denmark . many adds a few mushy apples in Danish Christmas Cabbage , it is really good ,is gives a natural sweetness . thanks for you videos

Being from Denmark, I can add that while this cabbage dish (called "rødkål" or "red cabbage") is traditionally used around christmas, it is sold in supermarkets all year, both fresh and pre-cooked, and is often used aside things like pork roast or duck, and on top on some types of open sandwiches. Fun fact - we actually also have a dish called "julekål" or "christmas cabbage" which is made of white cabbage boiled, blended, drained, and reheated with butter and cream.

I make a raw cabbage carrot beet slaw and I add blackberry Jam as well! It adds a sweet rich flavor. I look forward to trying your warm version.💜

Hi Arial Have you ever heard or thought of finding a small cast iron trivet ,you might even get 2 of them and put them both for decoration on your wood stove and then you would be able to use your wood stove like a crockpot but you wouldn’t need to use any electric or propane.. you would have used and saved at the same time plus the food tastes so much better cooked a longer time.

Ariel, thanks so much for this particular cooking lesson on the purple Christmas cabbage. I love this vegetable and look forward to trying it. The one thing I want to add is sweet onions just because I love to add them whenever it seems a possibility. : )

HI Ariël, this is such a fun dish. We also eat this in Holland a lot. I always use a cinnamon stick and e few cloves in it, this way you can cut down half of the black pepper and the slices really bring out the sweets of the cabbage! Just dutching your danish cuisine, give it a try you’ll be suspiced ;-) Tusend tak

Love that you blend homesteading with smart shopping. Total homesteading is incredibly labor intensive and you need more space or outbuildings for tools and even light equipment (the latter for efficiency in managing acreage). Can't wait to see what happens with your property.

I just saw this video and I had a flash back to the late 50's and early 60's over at my grandparents house (they were born in the Netherlands in the mid 1880's and came to America in 1920) and smelling a huge pot of red cabbage boiling away. It was served in a bowl so you could eat the juice like soup, along with a summer type sausage it made a great meal. I just want to say THANK YOU for reminding me of some cherished moments of my childhood.

As an Ohio girl transplanted to Danmark 12 years ago, I had never had red cabbage Danish style, it is so delicious, I love it!

You're welcome. I sure do! But watching something compost is pretty slow and boring. ;) I just keep adding to one bin for a year (everything that can break down, wood, weeds, veggie and kitchen scraps, paper, cardboard, and huminure) and then let it all break down for another year while I fill the second bin. The best book I've ever read on the composting topic is - amzn.to/2pErVsx

My wife and I both love cabbage, the only thing is I saw you toss the core in your trash I would assume for your compost pile. I've told my wife to never throw the cores away , they are the sweetest part of the cabbage and I cut them in slices and eat them raw with a little pepper.

Brings back memories of my days living in Germany many years ago. They have something very similar called kohlrabi which is a turnip and not much different from our cabbage. They use apples in theirs and if I remember correctly you can either eat it hot or cold like a salad side dish. I haven't had it since leaving Germany 30 years ago and forgot all about it until seeing this video. Another recipe for my folder! I love ALL your videos but since I also love to cook your cooking vids are some of my favorites. Do you have to send away for Celtic Sea salt or do you buy it locally? I just watched a KZbin video by a guy named Dr Bob about the benefits of using it and I think I might check into it. I wonder if Walmart might have it?

I usually get my Celtic salt through Amazon as most of my local groceries don't stock it, or only in tiny little expensive bottles - amzn.to/2SDqmYT . Walmart very well may have it too. I don't live anywhere close to one, so I'm not sure.

OK, we forgot to get the cabbage that day, but did get a nice purple head. My wife said that you didn't tell us that is will make your finger purple...LOL It is cooking down right now, but I took a small bowl sample. It is rather tasty, but somewhat tart. No, we don't do a lot with vinegar. Tonight we are having Danish Chrismas Cabbage and Shepard's Pie for dinner. You are giving us some interesting recipes, Thank you.

Interesting...but I cook all my greens, cabbage, peas, beans. brussels sprouts and broccoli with just salt, pepper, bacon drippings and ham. No sweet veggies for this 'Bama boy. I'll save the honey and coconut sugar for my biscuits and coffee. I make red cabbage slaw that's really good too.

I love red cabbage. My Mum used to make a red cabbage recipe with bramley cooking apples. I don't know the recipe and unfortunately she has passed away taking the knowledge with her. I suppose I could do some research n track it down online... everything is online now a days. XxxxX

In my Danish family it was/is most common to have the red cabbage with frikadeller and potato. :-) (Frikadeller is a Danish meatball of sorts.)

Red gabbage cooked in a bitter-sweet way is in use in all northern Europe countries. In Germany and Poland are added an onion, some cloves and a bay leaf. Put in a little bit butter or oil or lard, it will even get better! 😋

My Mother was from Germany (Bavaria) and she also put whole cloves in hers. Possibly the other ingredients as well. Didn't pay that much attention. Although I do remember her keeping track how many cloves she put in (maybe 8) and fishing them out in end. Otherwise you might get a woody bite. If she couldn't find all of them, she would warn the family to be on the lookout while we were eating.

Being half Danish myself ,I have enjoyed this dish my entire life ! My kids love it too , with grilled kielbasa sausage . Sometimes I add a few chopped green apples for variety . Great dish Ariel ! Always so health minded from simple ingredients on hand .

Nothing beats a soup plate of Cabbage and a Mealy Pudding (White Oatmeal wrapped in a Sheep's intestines) , marinated with Red Wine for a few hours then cooked as you would normally at 200 Deg C and after about an hour spoon into a large soup plate and enjoy with salt and pepper. Yummy in your Belly and great if you get constipated!

I am Danish and grew up with this. Lovely to see you do this recipe ... tusind tak, Ariel! 🌷 Your recipe is both similar and different than min Bedstemor's ... I am excited to try your recipe and see how they compare. I think it's nice that you include tips. In many cases people haven't had the opportunity to do large scale cooking. Things many of us take for granted knowing from growing up doing this type of cooking, are not necessarily understood by others. I encourage you to try making frikadeller, a scandinavian meat ball ... it goes AMAZING with Danish Red Cabbage. ;-) Most Danish recipes are made with pork or beef ... but as I was typing this to you, I thought of elk. That would be a pretty cool take on frikadeller. Elk is so wonderful.

Ariel, a couple of good recipes online are on Scandinavian Today and T ROY cooks channel's for frikadeller. The recipe I grew up with here in Canada included ... ground beef, flour, onion (chopped fine, minced with juices a bit if you can), eggs, pepper ... and butter, and always make sure the butter has turned a bit brown when you start adding the frikadeller.

Similar to German “rot kohl” seasoned with cinnamon, nutmeg, and allspice instead of the black pepper. I enjoy your videos. Nice to see a young woman who was homeschooled doing well. I homeschooled my own children and they’ve turned out pretty well, too, IMHO. 😁

I don't know about Danish Christmas cabbage, but that reminds me a lot of Blaukraut. Which is _very_ common in Germany. I will post the recipe our family uses, maybe you'll give it a try. :) Blue Cabbage (Blaukraut) 6 ounces bacon 11/3 cup onion, chopped (12 ounces) 1/4 teaspoon Liquid Smoke 11/2 cups vinegar 1 cup sugar 11/4 teaspoon salt 31/4 cups water 2 pounds blue or red cabbage, coarsely chopped 1 apple, sliced Cut bacon into small pieces; fry until light brown in color. Add onion and fry until onions are soft and golden brown. Remove from heat. Drain off and discard half of the grease from the bacon mixture; blend in Liquid Smoke. In a large pot mix the vinegar, sugar, salt and water; add the blue cabbage, apples, and the bacon mixture. Bring to a boil; cover and simmer for about 20 minutes or until cabbage is still a little chewy. Stir every 10-15 minutes. Makes 10-12 servings.

+Fy Nyth : It's a traditional dish in Germany. Very popular in the Bayern (Bavaria) region. I'm sure you could try another cured meat, but I make mine with bacon. Typically I make it when we have a German meal (like Schnitzel or Sauerbraten). However, like you, I like it a lot and make it occasionally with other meals. +frederick j. moller : If you'd like, I can print the rouladen recipe I use here as well. :) [Edit: Included recipe for Beef Rolls (Rouladen) for Herr Moller] ROULADEN (Beef Rolls) 2 pounds top round steak, thinly sliced pieces (1/8- to 1/4-inch) 1 cup finely chopped onion 1 cup finely chopped celery 2 Tablespoons butter or margarine 8 slices bacon 4 teaspoons prepared mustard 2 dill pickles, each cut into 8 long pieces Salt and Pepper Flour, to coat Cooking oil Broth or water, to cover (chicken broth or other) Cornstarch diluted with water Cook onions and celery in butter until just tender; set aside. In a separate pan, cook bacon until just done (to prevent dryness, do not over-cook). Chop and set bacon aside. Steak pieces should be about 4x7- inches in size and should be very thin with no holes. Spread each piece very lightly with mustard. Place one slice of pickle, one piece bacon and 1 Tablespoon onion and celery mixture to each slice of meat; salt and pepper to taste. Roll up, fasten with a toothpick; dust with flour and brown lightly in oil. Put in a casserole dish, cover with soup broth or water. Bake in a 325-degree oven for 11/2 hours, covering after the first hour. Drain the juice into a saucepan and thicken with diluted cornstarch to make gravy, add seasoning to taste. For each quart of liquid, use 1/4 cup of cornstarch which has been diluted in cold water. Yield: 8 to 10 rolls Guten Appetit!

We make a side dish with cabbage (known to us as Brown Cabbage). Pretty much the same ingredients. The cabbage is seasoned with salt and pepper and browned first, then the vinegar and water added. I don't believe the recipe as passed down had sweetener added but we always add a little sugar so it is similarly sweet and sour. We like it with turkey dinner - love it with cranberries along side. I am going to try yours to see how they compare. Thanks for sharing.

I made a purple cabbage dish just the other day but different recipe. Luv cabbage. The next time I prepare a cabbage meal i will try this recipe but with less pepper. Pepper goes on my eggs and thats pretty much it. My taste buds are a bit wierd i suppose.😊 Thank you for the vid! 👍

Going to have to try this one. I love cabbage dishes.....but I always have to cook them when my wife is out of the house...she hates the smell.

I've heard people talk about the smell, but I think that's when just boiling cabbage in water (something I've never done). If you are cooking this dish, the main smell is vinegar and pepper. :)

Lol! In our house it's the opposite: my husband hates the smell and I cook it when he is on the road 😂😂😂 I like to cook my red cabbage with balsamic or blackberry vinegar; adds to the fruity flavor. I also fry up some chopped bacon and onions first and add a bay leaf and some cloves in an onion to the cooking and fish them out after the cooking. Adds some more depth to the flavor 😋

Nice cooking , I eat ALOT of black pepper always freshly ground very high in Vanadium no real research on it's benefits at the moment but the suspicion is it contains anti cancer properties I just love the taste of it so 3 tablespoons is fine :P you didn't over do it lol ps you are SO right about magnesium and it is EXCELLENT for promoting a restful sleep people deficient in it do indeed have various problems inc insomnia among others

Vanadium is used in the treatment of diabetes. It regulates blood pressure. This info was obtained from The Illustrated Encyclopedia of Healing Remedies by C.Norman Shealy. Thank you for sharing this info. I’ll have to try it.

round about 1:00 she throws away some perhaps inedible (?) bits of cabbage but they looked like Christmas trees to me. I was disappointed they weren't part of the recipe. Might be nice one time to save those and use them as garnish on the plates. Make a point to tell the others around the table not to eat them if they're unpleasant. The way Ariel cut them out tho they looked like tiny pine trees w/ snow on them. I know they're not evergreen but perhaps they're purple cuz it's dusk or something? Maybe stand them up on a small plate using something sticky so they look like a tiny forest on the table. Just seemed a shame to throw em in the compost like that w/o using them for something first.

You can eat cabbage hearts if you like. But my compost is a super important part of being able to continue to grow food.

It's delicious, but I grew up eating it as German cabbage. My little German Oma made it all the time. I think a number of European countries take claim to this yummy dish. Thanks hon for sharing it with us.

I have never been a fan of cabbage for the most part.. There is a holiday that folks eat corned beef and cabbage around the only time i eat it , seems i have had a pickled cabbage corned beef of some sorts just not my dish in the pickled version.. But it looks good how you are doing it..

Yeah I've never been a fan of the generally soggy tasteless way I've seen it served with corned beef, but I do love cabbage served many other ways!

And cabbage soup , one of my neighbors brought me a container of hers one time.. I couldn't hardly eat it.. oh my..

Margaret Chase Hi Margaret, it is possible to replace the jam by homemade apple-sauce without any sugar. And if honey is possible for you, try to replace the sugar in the recipe with it. Kind regards from Paris! 🙂
