It's the middle of baseball season and I thought it would be really fun to make this baseball game favorite. I recently went to a game and posted the garlic fries on my instagram. Many of you thought i should do a video! So here it is. just make sure to have some breath mints handy because this dish is extra garlicy. Let's get started.
You're going to need
2-3 medium sized potatoes
6 garlic cloves
2 tbsp of parsley
5 tbsp of vegetable oil
kosher salt and pepper
1 tbsp of kosher salt
Preheat your oven to 450 degrees.
First clean and scrub the potatoes well. Then cut the potatoes in medium sized matchsticks and place in a large bowl. If you like them cut into wedges, you can do that too! Add 3 tbsp of the vegetable oil, some kosher salt and ppepper in to the bowl and toss until each potato stick is coated.
Line a baking sheet with foil. I like using foil when I roast things in the oven because clean up is a breeze. I just wrap up the foil and toss! Place a cooling rack on top of the baking sheet and line up the potato sticks on top. Make sure not to crowd the sticks - stagger them so that there is enough room to brown. If you crowd them, they will steam and you won't get that crunchy bite you're looking for.
Bake for 25 minutes until they are golden brown. If you cut thicker wedges, then you may need to bake them longer.
While the fries are baking, finely mince your garlic and parsley and add to a large bowl. Then add the remaining 2 tbsp of oil and mix well.
Once your fries are ready, quickly toss them in the bowl with your garlic mixture. Then immediately sprinkle the 1 tbsp of kosher salt and toss evenly to coat. Put the fries back onto the baking sheet and let them crisp up again in the oven for another 5 minutes.
Take it out of the oven and enjoy! Sometimes I like to sprinkle on some freshly shaved parmesan cheese to give it extra flavor.

yes definitely! i would add them when you add the salt after baking, and you won't need the extra oil the 2nd time around either. just sprinkle on the salt and garlic powder parsley then enjoy! :)

if you don't have a baking rack, then you can just bake them on the sheet, but make sure to turn the fries halfway through the first baking process. this will help them crisp up evenly. :)

yes you can use regular table salt, but cut the amount in half because kosher salt is less salty than regular salt. enjoy! :)

kosher salt has larger granules and coarser texture than regular table salt. It's also much less salty. you can definitely use regular salt for this recipe, but make sure to cut the amount in half. :)

for sure! you can just season them right after you take them out of the oven. no need to do the oil mixture then. just sprinkle everything while it is piping hot!

if you use regular salt, make sure to cut it down by 1/2. table salt is much more concentrated/salty than kosher salt

Russet potatoes will work best because of their consistency. Other potatoes tend to get too waxy but they will still taste good :)

I made them and they loved it!!! I'm a huge fan of Garlic, and the flavours these packed were amazing!! I followed the recipe, but my fries weren't really crispy. Any tips on how to get them crispy?

Yes but it won't (obviously) taste as fresh. But if that's the only option go for it!

No. Not necessarily. It just makes clean up easy and it catches any excess oil.

I can imagine why there's a difference between kosher steak and regular steak. Just didnt know there was different in something like salt :) but now Im going to try it.

actually this would help the potatoes get crispier. by soaking, it removes some of the starches that hinder the water in the potatoes from getting out. i know - it sounds counter intuitive but let me know how it works out for you! :)

I tried it! I noticed that the fries were a bit fluffier than the batch that I didn't soak in water, and yes they were a bit crispier! (:
