@Miss_Vivian all the sugar would come from the chocolate chips, so it depends on how much you put in ex: a 1/4 cup would be like 22 grams of sugar for the whole cookie

Tip for all: You can use carton liquid egg whites, just make sure when you stir it, it's at room temperature (you can microwave it for 10-20 seconds). That's what I did. It won't have stiff peaks until you add the cornstarch, and you'll know did it tight when there's no liquidy egg whites left. So, blend the liquid egg white by themselves on low for 1-2 minutes, then add cornstarch and everything else, and blend on high for 1-2 minutes, should be stiff by then. If not, then the eggs were too cold or did not blend for long enough

Thank you for being honest about it not being like a cookie, but still decent tasting. I am currently trying to go on a high protein diet for weight loss since I have issues with appetite. I've tried a few recipes and there is definitely hit and miss component to finding what you like and what works for you. A super key part is find a protein powder you like, because it does come through if you use it in certain recipes. I don't hate the protein powder I have, but I definitely don't love it, so I'm gonna try to order some samples from my protein because they are international and apparently samples are not common where I live. Also, I learned that the erythritol and some other alcohol sweeteners get a minty/cooling affect because they steal the heat from your mouth. A way to combat this is by dissolving it properly which is hit and miss if you bake it straight in. I've been thinking of making my own sugar free simple syrup which is just water and sugar(sugar replacement) and keeping it stored for use because I'm not a fan of that cooling sensation unless I expect mint in what I'm eating LOL. Oh and last tip, for those who might be using xylitol, please make sure none and I mean none of it gets near your pets. If you spill some, thoroughly clean it up. It is stupidly toxic to them. In cats it messes with their blood sugar instantly and even if they survive the hypoglycaemia, most die of liver failure soon after. Chocolate is bad too, but xylitol is really really bad, so please keep your pooches, kitties and likely other pets away from it if you use it in cooking to lower calories and sugar content. Last last tip: If it tastes just a little too sweet for you before baking (and this goes for pretty much everything, even regular baked goods) it's perfect. If it tastes just right, you need a little more sweetness as it reduces a bit after baking. I think it's the same rule when making ice cream too, freezing or heating changes the level of sweetness. Okay I'm done, lol.

reduce your blood sugar/insulin response by cutting out the carbs from the cornstarch (high GI/GMO/highly processed). you don't need it for cloud bread. instead sub 1 teaspoon psyllium husk _powder_ (ZERO net carbs/high fiber) or 2 tsp arrowroot powder (about 5 net carbs) or 1/2 teaspoon xanthan gum (ZERO net carbs but check your brand/label). whichever option, carb free or at least cut by 1/2 vs cornstarch. i use psyllium husk powder most of the time, & use xanthan gum when i want a 'puffier' cloud. (im keto so not wasting my 20 daily carbs on starches or even arrowroot!) this looks good tho. gonna make it. ✌

Is it good in coffee? I've been trying to find something to replace sugar in my coffee and I've tried Stevia, but that didn't quite cut it. Stevia seemed to add to the bitterness of the coffee whereas sugar lessens the bitterness of coffee so I wonder if monkfruit would amplify the bitterness or if as you say it is like real sugar it would cut the bitterness down.

You are using a BEATER. A whisk has about 8-10 thinner wires (sorta shaped like a light bulb). It should have come with your hand mixer. Your egg whites will whip a lot faster than using the beaters.

If you don't want the carbs you can use egg white protein powder. That's what I do.

I didn’t weigh out the egg whites but using carton egg whites is not recommended because they’re pasteurized and won’t whip up the same way

if you arent giving em to the dog, use those yolks to make a killer sugar free lemon pousset/curd, or an awesome sf pudding. my dog doesnt get my yolks. she does however get the olive oil from my daily can of sardines added to her kibble... and i give her that begrudgingly hehe (there's _SO MUCH_ omega3 in that oil... plus its evoo so theres that benefit too... i used to drink it instead of drain it... delicious!) anyway Maddie goes frickin insane for it now! shes 10 & been eating the same kibble all her life & i spoiled her with a bit of bacon grease for awhile. big mistake! but i dont mind.. shes my girl & its very healthy for her too... her coat shines bright like a diamond! 💎)
