I made your recipe yesterday. There were 10 pints in all and everything sealed. All of the veggies except for the cauliflower are from my gargen. I am so looking forward to opening a jar and trying it in a few weeks. They are beautiful! Thank you :-)

Yum! This looks like what I have been searching for! Too many recipes have stuff I don`t like & I`m not comfortable making adjustments. This sounds perfect..gonna give it a try. What are Sheppard Peppers? Are they hot or mild? I`ve been a fan since I saw your canned French Fries! LOL We love them!

SARAH COURTNEY...Sheppard peppers are sweet...and taste much the same a bell peppers. They just seem to be an elongated form of bell peppers..(Optional, I added them because I had picked them from my garden that day)

Can someone tell me what the shelf life of this would be? I'd love to make this but since it is only myself, I know I would not be able to eat all of it within a few months. Thank You from Canada.

It should last 12 to 18 months minimum, and you can make a very small batch if you feel so inclined.

Yes the vege's are crunchy...but I would add some sugar to the brine to cut the taste of the vinegar a bit. I have not made it many times as we don't eat a lot of pickled foods.

Toni, where did you get that Bernardin canning book? I looked on Amazon and they want $96.00 for the hard cover and $78.99 for the paperback. Are they really that dear? I wonder if Canadian Tire has them.

@@HerHomesteadSkills Thank you, Toni! I never even thought about Chapters and there’s one a couple of miles from my house! I went out yesterday to look for one at Canadian Tire, Walmart and the Book Depot, all farther away from me than Chapters, too, but none had it. Thanks again! You are just a wealth of knowledge which you share generously!

I just opened a jar of this that I canned in early 2019 and it still tasted delicious. I do not use olives or bell pepper because the bell pepper skin stays tough and nearly unchewable. Thanks for the video. Be healthy, stay safe and many blessings, Morgan

Linda Liddell...I don't know what the glitch was, but I checked and there are no restrictions, It is set for public, and I started the video on youtube, and it was fine...perhaps a temporary youtube issue!!

Clyde McGhee...perhaps it didn't appear so on camera but the head space was adequate, and every one sealed just fine.

I absolutely love giardiniera, but it's only available in a few specialty shops where I live now in South Carolina. Not a large Italian community here I guess. Definitely going to be making some now. Thanks for sharing 😘

Christine Sturkie..We still have a very large Italian community in Ontario..and items that cater to it are readily available...such as pasta makers, tomato & sausage machines..bakeries that specialize in Italian bread and other foods...I would love to move down south...but would definitely miss some things too.

After processing how long to wait before eating? I know some recipes need to sit and let the flavors mingle/marry. Thanks.

Ann Likins...you can eat this almost right away...and should be refrigerated once opened, however as you stated...leaving it for two weeks or so will certainly allow the flavors to "mingle"

I really want to make this and thank you for the onion peeling I had no idea how to peel those I have never bought them I ususally get them frozen but i haven't canned with them I would love that addition. Toni I lov eyour videos I am trying to set a timer to 10 minutes at a time to allow me ot watch videos I get consumed and speen all my day watching videos So soem of yours take me 3 timer times but that is ok LOL I am so glad I found your channel even if it was from the canning lid conteversery LOL I did can something like this a couple weeks ago and only had bell peppers and onions I did add soem jalapenio peppers. I haven't tasted it yet but I know it is going tobe good. I would like the califlour and other veggies you put in so I might make this I do have teh aballl book

@@HerHomesteadSkills Yes I was hoping the trouble makers would STOP the madness. Some people don't have anything better to do so they jump on board with some things just to be making trouble. BUT glad I found your channel when it was suggested.
