Thanks for this I made mine with carrots and garlic only and sub'd the sugar with honey. Added mustard seed and nigella seeds and it turned out delicious.

I made exactly as shown but it tasted too sweet. If I cut out the sugar would it give it a salty or pickled dill taste?

Hello David Thank you for your great question. The sugar in your Giardiniera balances out the acid from the vinegar. It neutralizes the flavor of vinegar and salt in the Vegetables and gives it a milder flavor. Without sugar, the taste of vinegar and salt would make the Giardiniera vegetables way too tart and sour. Honey can be substitutedfor sugar. The flavor ofhoney is sweeter than that of granulated sugar, so it is advisable to use less honey than the amount of sugar specified in the recipe. For example, if you use 1 cup of sugar, use 1/4 c of honey.

Very nice recipie. Love pickled vegetables. The music is not necessary. Has the same background beat (tic tic) is tireing. It is like for a mystery movie somebody walking to do wrong. Not appropiate for a recipie.

Of course you need to add sugar. The sugar, salt and vinegar preserves the vegetables. If you lessen the sugar, the mixture will taste too sour. The chef has done a great job.

Fermentation is different than pickling. The taste is different. Not everyone likes it. The reason that I do it is for health reasons. Fermentation assists in gut health. Pickling involves sugar, which over the long term creates inflammation and poor health.@@Nelli77210
