hot herb tip: for your dried rosemary & parsley (also basil/oregano/etc) ya gotta rub it between your hands then add it to the pot. i think it helps bring out the oils/flavour but also it makes u feel kinda like a witch casting a spell into ur cauldron

About the spices - it's best to put the powdery/crushed ones when your onions and celery are done sweating so you actually get kind of a paste of spices to which you then add water/stock etc! The leafy ones I always add when there's enough water because they burn easily. Love you channel btw, been following for a long time!

I learned recently that bay leaves refer to any leaf from an edible tree from the laurel family. Therefore, you could buy different packages of bay leaves that come from different trees and have completely different flavour profiles. that liquid coming out might be more than usual because the celery was frozen so its cell walls were pre-broken and its internal water was pre-released, but water coming out of aromatic veggies is the whole point of sweating them!!

I try to always have some form of MIREPOIX (onion, carrot, celery aka the ultimate base soup flavor) on hand. The frozen celery is such a good idea that I’ll have to start incorporating into the biweekly prep that I try to do for freezer & fridge staples.

I'd never thought about the moisture getting into spice containers via steam from food, but it seems so obvious now Haha when I make food that's quick to come together, like soups, I try to dump all my seasonings into a dish or two so that I'm not having to grab different containers in the midst of cooking your soup looks good, and I like the advice that you can just use leftover bits of noodles in soups, very handy!

Hey Hey Great video. Friendly Tip 2 parts onion (500g) 1 part celery (250g) 1 part carrot (250g) Mirepoix. Sweat off for 11 minutes minimum. You can also roast it instead (350 45-ish minutes) Smear tomato paste around the veggies on a baking sheet then roast a huge batch of mirepoix great for sauce and soup >;-) Awesome you are >;-)

jsyk -- if you gently blow on the pot while you're putting in your spices, it blows the steam away from the spice jar :) therefore, no clumpy spices and you can season the soup throughout!
