Eggless Soft Moist Checkerboard Cake - Follow this cake recipe and folding method, the texture of the cakes is super soft despite they are eggless. The 2-flavor combo turned out to be super delicious. The checkerboard pattern also turned out amazing. I hope you’re inspired to make this cake for birthdays or parties. Enjoy!

Ingredients:
• Cotton Sponge Cakes
I used 7 inch pan, 6 inch ring cutter, 4 inch ring cutter and 2 inch ring cutter
-Vanilla Cake
240 ml [1 cup] milk
1 tbsp white vinegar
240g cake flour
1¾ tsp baking powder
¼ tsp baking soda
¼ tsp salt
150g [¾ cup] fine sugar
100g [¼ cup + 3 tbsp] light oil
1 tsp vanilla extract
-Chocolate Cake
240 ml [1 cup] milk
1 tbsp white vinegar
220g [1¾ cup] cake flour
20g [2½ tbsp] cocoa powder
1¾ tsp baking powder
¼ tsp baking soda
¼ tsp salt
150g [¾ cup] fine sugar
100g [¼ cup + 3 tbsp] light oil
1 tsp vanilla extract
• Chocolate Ganache
120g [1 cup] dark chocolate, chopped
120g [½ cup] whipping cream, hot
• Whipped Cream
240g [1 cup] whipping cream
30g [2 tbsp] fine sugar
• Chocolate Drizzle
30g [¼ cup] dark chocolate, chopped
30g [2 tbsp] whipping cream, hot
syrup
[1 tbsp sugar + 2 tbsp hot water]
Piping tip: 1B
Instructions:
• Cotton Sponge Cakes
Vanilla Sponge Cake
1. Preheat oven at 180°C/355°F.
2. In a cup, add milk and vinegar. Give it a quick stir and let it rest for 5 minutes.
3. Sift all the dry ingredients (cake flour, baking powder, baking soda and salt)
4. In a large mixing bowl, add sugar, oil and vanilla extract. Mix vigorously until well combined.
5. Add in the sifted dry ingredients in a few batches, alternate with the milk mixture.
6. Add in the milk mixture in a few batches, alternate with the sifted dry ingredients.
7. Mix until combined, do not over mix. Switch to a spatula to mix and scrape the bowl to ensure even mixing.
8. Transfer batter into a 7-inch prepared pan, greased and lined with parchment paper.
9. Bake in preheated oven at 180°C/355°F at 35 minutes or until inserted skewer comes out clean.
10. Let it cool completely before slicing.
Chocolate Sponge Cake
1. Repeat exactly the same steps as the vanilla sponge cake.
2. The only difference in the chocolate batter is that there is an additional cocoa powder in the ingredients to be sifted.
• Chocolate Ganache
7. In a bowl, add the chopped dark chocolate.
8. Heat the whipping cream in a milk pot. Add the hot cream into the dark chocolate. Let it sit for 5 minutes.
9. After 5 minutes, mix until the mixture is combined and smooth and no lumps. If there is still lumps, microwave a few more seconds and mix again until lumps free.
10. Cover and refrigerate for at least 30 minutes until the chocolate is hardened.
11. Mix the chocolate with an electric mixer until smooth, creamy and stiff.
• Whipped Cream (to cover the cake and piping the dollops deco)
1. In a mixing bowl, add whipping cream and sugar.
2. Mix until stiff peaks, do not over mix.
• Chocolate Drizzle
1. In a bowl, add the chopped dark chocolate.
2. Add the hot cream into the dark chocolate. Let it sit for 5 minutes.
3. Mix until creamy and no lumps. Transfer into a piping bag.
• Assemble the Cake
1. Add one layer of cake (one with the chocolate cake in the outer rim)
2. Brush the surface with syrup.
3. Add a layer of mocha ganache.
4. Add another layer of cake (one with the vanilla cake in the outer rim).
5. Brush with syrup.
6. Repeat no. 1 to 5 again.
7. Cover the cake with whipped cream.
8. Refrigerate while working on the next step.
9. Drizzle the chocolate around the cake rim. Drizzle the diagonal pattern on top.
10. Pipe the dollops around the cake top.
11. Cake is ready to serve.

Thank you for the detailed video and recipe. Made it and it came out so well and moist! I used the same measurements in a 6inch pan and made two 2 layer cakes in total.

Hello Fiona. Thank you so much for this amazing recipe. I tried the cakes today and they came out super soft and tasty. However, after cutting the rings while lifting it up all the rings broke 😔😔. The cake got sticky at the bottom and was difficult to lift. Can u please share any tip on the same 🙂

Hi. I was using 7 inch pan. You probably need another half of the recipe for 8 inch pan. So total 1½ of this recipe will be quite comfortable

Superb recipe! Sugar content is also perfect. The only issue that hapnd was cake came out too dry? Does the pan size makes difference? I used a sheet pan instead of round pan. Otherwise all the ingredients i used were exactly like your video. Please suggest🤓

Hi dear. Yes if you are using sheet pan, the baking time is a lot less. If the height is about an inch or less, the baking time is only about 12-15 min. It's depends on how deep your pan is, the more shallow the shorter the baking time, with the same temperature. This will definitely improve in the moist of the cake

I used a few types of dairy cream depending on stock availability. You can go for Anchor, Paul's or Millac

Whipped cream is pretty tricky if you're not familiar. For foolproof, choose a whipped cream that says 30% fat or higher (usually says on the packing for diary cream). The higher the fat percentage the more stable the cream is. If you live in a hot country, best to whipped your cream in a chilled mixing bowl, it will enhance the stability. For covering the cake, don't over whipped your cream, stop when the moment your cream become stiff. That way you get a smooth surface and nice piping dollops

Which oil did you use for this cake, and which would you recommend one uses for cakes? is COLD-PRESSED CANOLA OK?

Yes can. Because the time gap is about 35min, so it will be fine. Just leave the batter in room temp while waiting

If we use all purpose flour/wheat flour instead of the cake flour,will we get the same texture of the sponge? And do we add the same quantity of all purpose flour/ wheat flour as that of the cake flour?

@@kushichitlangia Yes I would say using cake flour will help in softer texture. But you can also home-made cake flour with 2 simple ingredients which you'd be surprised. Thanks for your recipe! Any reasons why whipping cream will melt very fast? I noticed that some of ur recipes will be using cream cheese for frosting but some recipe just use whipping cream. Any differences with or without cream cheese others than flavour?

Hi dear. The reason why cream cheese was added is so maintain that authenticity of the cake, not because of stability reason of the cream. Maybe I can share the type of whipping cream in the market that you can try which I feel is good.i will list down both dairy and non dairy brands below Dairy cream: Anchor, Paul's, Millac Gold Non-diary: Value Pride, Rich's For non-diary whipping cream they are very stable. But don't over whipped, they get tight pretty fast. For dairy whipping, you'll need to whip slightly longer. Again, don't over whipped. Hope this will give you some idea about the creams

Thanks for your reply and sharing! The cream I used is dairy cream. After whip its quite tight and able to frost it on cake. Anyway It will melt in a short time. It will start to melt after 10 mins when I take out cake from fridge. And when I taste it out, its more like ice cream texture instead of cream. 😅😅 Any ideas on it? 🙏
