Not only is this one of my all-time favourite chicken dishes, it's also one of the most meaningful. My grandmother makes this for me every time I go to Thailand-a non-negotiable tradition. Usually the chicken she uses is the leftover from Hainanese Chicken Rice (link to that video below), but you can make it directly by simply poaching up some chicken first as shown in this video. OR actually, you should intentionally too much Hainanese chicken rice, and get 2 epic meals out of it!
The chicken is twice cooked, and tossed with ginger, garlic, soy sauce, and palm sugar for a sweet-salty-umami flavour that is unparallelled simplicity. The kids will love it, and for the adults, make the spicy-tart dipping sauce and it's a flavour explosion in your mouth! Poach the chicken in advance, keep it in the fridge, and dinner will be ready in just a few minutes!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. There's always a reason grandma's cooking tastes so good. In today's world we always look for shortcuts which usually leads to a less than desirable results and depth of flavor. I so love your channel especially now that i live up in Isaan.

This was amazing! I did everything as written in the recipe. I was worried about the dipping sauce being too hot but it was amazing and will definitely be making it again for other things.

OH! So much nostalgia! I love this dish! We'd get it in the morning from the vendor on the street who'd serve it in a plastic bag with sticky rice and it was SOO goood! I would love to see more recipes like this that turn the leftovers from one meal into two meals! Thank you for the recipe!

I really enjoy your cooking videos. They are not only very informative, but the lessons and tips are usually not too complicated. My wife is a Filipina, but thanks to you, I think that I do a better job at preparing the Asian meals than she (of course I wouldn't tell her that). Hi, my mother used to cook this dish, too. I used to love this dish as a kid. The sauce she used was chilli, garlic and ginger pounded.

My grandpa had a similar recipe for his "worship meats". He used leftover roast duck, roast pork, chicken etc. He added some chilies too. So good!!!

Wow, I just made this dish, and I must say, this has to be one of the best recipes in terms of minimal effort vs. maximum mastication satisfaction. I deviated a bit in that I used white instead of black pepper, and when I checked for salt, I used black salt. I also tossed in a light splash of sesame oil at the end. I'll definitely be making this in the future, so thank you, and thank your grandmother too!

OMG! This so simple and delicious! I always love Thai food..but it's always hard to get the authentic Thai flavour here in Malaysia which compared to the food I tried when i'm in Thailand.. By the way Pai, can you make a video of a Thai dessert which called "Thab Thim Grob" (if i'm not mistaken :p)? The one which has jackfruits and water chestnut with coconut milk..I always crave for that whenever I went to Thai cuisine..but there was once I visited Koh Lipe and they didn't have this dessert.. so I'm thinking may be you can share with us this dessert recipe? It really is avery great dessert..would very appreciate if you could share with us.. :)

Hi Pai, I remember your grandma is from Hainan right? I'm also a native Hainanese who studies in the US. This dish make me SO FRICKING NOSTALGIC because this is exactly what we always eat the day after big festival since there are always tons of leftover Hainan Chicken. Gosh how I miss my home😭😭😭 PS: always surprised by how similar are the Hainanese cuisine and Thai/Southeastern Asian cuisine despite coming from different countries.

this is a common practice in Vietnamese cuisine too! sub the soy sauce with fish sauce, add shallots and lemongrass, let the meat caramelised and crispy!

Question I've been curious about, you usually use Vegetable Oil in your recipes. I have a preference for Canola oil due to it having a higher smoke point (I hate when my apartment gets all smokey and sets my smoke alarm off) and I find it a little healthier than vegetable oil. But does Canola Oil give the food a different flavour or would it be the same since they are both neutral flavoured oils?

So "vegetable oil" it's actually a generic term that refers to many cooking oil made from plants. So it can be made from corn, sunflower, soybean, and even canola is considered a vegetable oil. The oil I use is actually canola :) All vegetable oils have neutral flavours and will not affect the flavour of the dish.

Just make sure it's not already to salty otherwise you won't be able to add much more seasoning.

Hi Pai! Slightly off topic question... but what is the difference between Thai Jasmine rice and Thai Hom Mali Rice? I was at the supermarket and I saw both and couldn't decide which one would suite Thai dishes best. Love your channel by the way! :)

James Peters I believe they are the same thing. That's just how jasmine rice is called in Thai language. Hom = fragrance/smell Mali = jasmine I guess there's an attempt to rebrand the original "Thai" jasmine rice because there are now other Jasmine rice from many other countries.

Could I use leftover rotisserie chicken? Or will it be too dry due to its cooking method?

My concern with that would be that some rotisserie chicken is very well seasoned already. Many are brined so the meat is already quite salty, so you really don't have much room to add the soy sauce which is a key flavouring of this dish. If you rotisserie chicken meat is relatively bland, then it should be okay.
