I really appreciate how he keeps the ingredients relatively accessible and short in quantity and therefore cheap to make it realistic for many families who still want to cook these high-quality meals on a limited budget + keeps the process simple for those who don't have the time to go through a long stretch of preparation, rather a quick one, hence the short video length, yet still manages to explain the reasons why certain stages are done the way they are. I can see why Marco loves cooking steaks with the seasoning paste so much. Some professional chefs love to cook beef in beef fat. This is no different, using the oil as your fat and getting the beef flavor from the stock cube. Of course, the mushrooms for added flavor. Plus, salt draws out the moisture of the beef the longer its on the steak without cooking it.
