For the hangover guys: 2-3 knorr beef stock pots in a cup of hot water, make sure it mixes well, stir it up with a spoon or just shake it with your deliriously trembling hand - again, it's your choice, just like it was drinking yourself into a stupor yesterday - to finish, put in a tiny pit of olive oil and some parsley, and you're all set to go again

I really appreciate how he keeps the ingredients relatively accessible and short in quantity and therefore cheap to make it realistic for many families who still want to cook these high-quality meals on a limited budget + keeps the process simple for those who don't have the time to go through a long stretch of preparation, rather a quick one, hence the short video length, yet still manages to explain the reasons why certain stages are done the way they are. He's extremely brilliant at his craft.

Chef White and Chef Pepin are the only true remaining ambassadors of cooking. Both gentlemen are masters of their art and craft, and use their talents to create techniques that are accessible for people on any budget, therefore inspiring new generations of culinary enthusiasts and artists. Both men can execute any given dish flawlessly, and both have the humility and respect of their craft to adjust their methods and share their tips for the advancement of that craft. True chefs and great human beings.

I can see why Marco loves cooking steaks with the seasoning paste so much. Some professional chefs love to cook beef in beef fat. This is no different, using the oil as your fat and getting the beef flavor from the stock cube. Of course, the mushrooms for added flavor. Plus, salt draws out the moisture of the beef the longer its on the steak without cooking it.

Had more point to it than the space before that question mark.

I really like Marco, and I really like steak, but the fat on these steaks weren't rendered sufficiently, IMO. This may have been the reason why he dabbed all that olive oil at the end there. I prefer cooking steak like Gordon does; in a pan, with added knobs of butter and garlic to finish.

Why does it have to be rendered almost completely? Genuinely curious, because to me, that actually looks delicious (the little edge of fat that is).

In my experience, it can be tough to eat, and requires a lot of chewing, if not rendered well.

The way he’s cooking this steak isn’t the only way to cook steak, it’s just one style. I promise you he cooks it other ways too.

Thing is I am pretty sure Marco used stock cubes a lot in his 3 star restaurants. Nobody commenting here can cook anywhere near his ability.
