I became a bigger fan of sandwiches when I started to grill them. For this panino I flattened and seasoned a chicken thigh and then grilled it. After toasting the bread, I built a simple sandwich, only garnishing it with some chopped sun-dried tomatoes and Romano cheese. This sandwich would be even better with lettuce and fresh tomato. You can make panini as simple or complex as you like. For me, toasting the bread on both sides makes them extra delicious.
There is no recipe for this panino on my web site. It's a simple sandwich of bread, chicken and cheese. However, here is the formula for the coating mix I used on the chicken:
4 cups all-purpose flour
1 teaspoon ground oregano
1 teaspoon chili powder
1 teaspoon ground sage
1 teaspoon dried basil; ground
1 teaspoon dried marjoram; ground
2 teaspoons pepper
2 tablespoons salt
2 tablespoons paprika
1 teaspoon onion powder
1 teaspoon garlic powder
Optional 1 tablespoon MSG (monosodium glutamate)

I usually make a lot of this and store it in a large container. I use it occasionally when I want to make fried chicken.
