I'm from New England, the home of the lobster roll and I've had hundreds and most suck and are too expensive. I think yours is the first I've seen that isn't 50% mayonnaise. Looks delicious, good job!

Love how the New Englanders appreciate Chef Tom’s take on the lobster roll. People from Baltimore get all bent out of shape if you don’t do seafood their way and people from Texas hate it if you use anything besides salt and pepper on your meat.

May I suggest, that when grating citrus rind, please make sure you plunge it in boiling water for about 3-5 seconds, to kill any germs, before grating.

To avoid confusion... Lobster tails are actually 3 minutes no chill and claws are 5 minutes and chill. Michelin guide standard.

Crazy how cheap they are right now. Up here in Maine we're paying $4.99/lb for soft shell. I steamed up 6 last weekend and just ate it with butter squirting lobster juice everywhere. Some salt boiled potatoes on the side. I had to take a bath after I ate. But.......it was good. Not as good as hard shell but definitely worth every penny.

Kevin Wasilauskis , went to market to pick ‘em up and low and behold sold out. Bought large real large shrimp instead but not the same we eat shrimp regularly. Also got steaks settle for a little surf and turf. Life is good. Cheers 🥃

Does not affect the cooking. Purely a matter of quick kill vs 15-30 secs of boiling kill. Some biologists say the central nervous system is not advanced enough to feel pain. Others say that’s a convenient story. I grew up just tossing them in the pot but now I do the knife dispatch method just in case. Easy extra step.

I'm from Wichita also. Lobster tails were on sale at our major grocery store the other day. For 2 frozen lobster tails, fairly mediocre in size, was 18 dollars US. I have a friend in Halifax, says he can go down to.the docks and buy just about anything fresh out of the water. Need to get up there for a visit sometime.

Market price at a restaurant in STL has them at $47 a pound. In Maine I had a 3# for $30 a Lbs. Last year.

You can have lobsters shipped to you directly from Maine for about $25 a pound for 2 pounders and that’s with overnight shipping. If you are in New England, I’d expect to see maybe $12 a pound.

I’m in FL and they ship live lobster down here and hold them in a tank, live. $15-$25 per pound, so about $20 or so each for the size Chef Tom was playing with. Grew up in NH and can tell you live lobster=live lobster no matter where they are. Don’t listen to the crazy Mainers telling you you have to stand on the dock to get them fresh.
