This has got to be one of the useful videos I've seen in a long time. My wife doesn't like bloody steaks. And typically when I try to sear a thick steak, it's burnt on the outside and bloody on the inside. I grilled some thick NY strips tonight and using indirect heat for the first part and then a quick sear at the end was PERFECT. Thank you for this! I learned a lot. You are a genius!

Me too just now, but they were $87…. times have changed in 2024 since two years ago, I see. 😂 This was prime ribeye though $28.99 a lb. Up from the “choice ribeye that was $18.99 a lb. I guess I did decide to splurge a little. Dude cut them way too thick but as a man, I wasn’t about to complain when I seen him lay those fat girls on the scale 😂

Followed your directions to a T but we were too hungry to refrigerate our 1 1/2 inch rib eye so we threw it on the grill and it turned out perfectly!! The 1 minute on higher heat on each side at the end was the BOMB!!

I always used to do this in reverse. Sear at 450 for 3 min (each side) and then lower temp for 10 min (or less) each side at lower temp like 300 or so. But this works way better. Thanks for posting!

Best of both worlds I have a griddle skillet thingy that covers about 1/3 of my grill so I can crank that side and basically pan sear on my grill and still get grill marks. (Not that I really care but it does look better)

I find for thick steaks it’s best to sear at max heat 4 min total, (rotating after 2), then of course do the rest at low if you’re going for the look

Me too but there is something to be said about just turning it on and cooking. I always misjudge how much charcoal I need, for the (almost always) different amount of food I cook. When I cook for one or two people, charcoal is great. But nothing worse than having to get more charcoal ready because it burned down before you expected. Plus the speed at which the charcoal burns varies on how much wind you have combined with how much ventilation you open up on the grill. So there is just so many variables, I ain’t got time for this bullshit.😂 So basically I couldn’t live without both.

Looks dam good to me, but u kno there r sum people out there don’t want a steak unless it’s been killed twice, u kno killed to git da steak then killed again cuz it’s over cooked n dry. Want mine just how u cooked it
10 minutes on each side way too long. next time crank your grill to highest setting and let it warm up for about 5 minutes. Slap your steak on there and flip after 6mins. take off grill at 130 and let rest

Wow, terrible joke. Not a fan of the taste of canola oil on my steak either and the grill marks are less than impressive. Good result in the end but far from my favorite video of yours.

Grill marks are over rated, though my thumbnail in all honesty, was the second steak I grilled, which looks fantastic I might add. lol, As far as the canola oil goes, some restaurants won't use anything else for higher temperatures. P.F. Chang's is one of them.
